Next time you make Mac n Cheese, I recommend a little bit of garlic powder and onion powder. Really adds more flavor to it. Also, if you can, make the cheese sauce separate from the pasta then mix. American cheese will be creamier and added with some cheddar it's a good balance. Shredded cheese will make it melt easier. Lastly, keep some of the shredded cheese until the end, put it in as a last step and it will be nice and gooey.

Happy belated. Bacon Mac N Cheese looks good. One of my faves is tuna mac n cheese. Just make mac n cheese and ad canned tuna at the end. Soooo good!

If you want a creamier cheese you need to throw in some Velveeta. More milk (or better yet heavy cream) would help too.
I also recommend you make your sauce in a separate pan so you can get it mixed up well before you add to the pasta 😉
As you surmised... parmesan does not make a great (base) cheese for Mac and cheese... but I add it to all of my pasta dishes. I highly recommend giving it another shot with Velveeta and then grate a large pile of parmesan cheese into it... you'll love it I promise!
Next time, a little milk and Colby and American cheese for more flavor.
