Stockfish is unsalted fish, especially cod, dried by cold air and wind on wooden racks. The engine name reflects the ancestry of the engine: Tord Romstad is Norwegian and Marco Costalba is Italian...and there is a long history of stockfish trade from Norway to Italy.
