Hi Helen. It's nice to see your video clip about Bun thang. Only some small things I found: - We don't use the shitake mushroom for this kind of noodle. The strong flavour of this mushroom may affect the original flavour of this dish which is from chicken and shrimp. - The preserved radish with a sweet/sour taste may not be recommended as it might change the original taste. A better option is dried radish. - Instead of cooking the dried shrimp with the broth, we can make a kind of fine crumble shrimp (or "ruoc tom") and serve together with the noodle. A traditional way is cooking the broth with dried shrimp's heads. Anyway, thanks for sharing and hope to see the other video clips. Best wishes, H.
Hello Helen, Made Bun Thang yesterday is was very good. I could not find the sweet and sour preserved radish but I did fine sweet pickled radish but, the dish still tasted good. Bought me a fresh whole brown chicken and had fun with the recipe thanks again.

Vietnamese rice noodle is the best. I am a vegetarian, I buy the rice noodle and make the broth and add the vegetables myself. In the restaurants, they use broth that comes from meat. I also like Korean style bimbimbab with vegetables only.
Hi Helen, I would like to ask a question related to the dry shrimps that you introduce in the beginning of the video; however, i don't see you use it throughout the video at all. Did you forget about it? if yes, you will add it to cook for the broth or just put on top when you serve?
I tried to make the roasted pork belly and also the sticky rice. Unfortunately, it didnt taste good. The pork was salty and the sticky rice was way sticker than it supposed to be :( maybe because I used the glutenious rice from Thailand, which is sticker than the regular ones. But today, im successful with Bun Thang, which I have never tasted it before. Lol. It is so yummy and the broth tastes very light. Yay~~~. I wanna share a picture of it but i dont know how to do it on youtube :(

Dear Helen, i don't think you need to add ginger and onion to the broth. Dried shrimps (and squids), shitake mushroom and a whole chicken is enough for the flavor. In fact, ginger and onion might bring a hint of heat and spicyness to this dish, which supposed to be light and fresh. Also in the north, we garnish with coriande, instead of vietnamese mint. And you may not believe this, but a touch of shrimp paste (mắm tôm) is the key to the taste of this dish. Hope this help ;).
