    the part that probably would confuse people is the (n - (r -1)) and the (n - r - 1) that follows the (n -r)...

      If I get the part that you mentioned right.. I'll write my understanding down to help others
      after arriving at n - (r - 1), we continue the pattern of.. idk what it's called, but in (n - 1), then (n - 2), the substraction gets bigger by 1, so n - (r - 1) also gets a +1, becoming n - r, then it gets +1 again becoming n - (r + 1), the next would be n - (r + 2), and so on
