    I can potatoes regularly. I do herb potatoes and plain. We oven roast them as a side to meals. We add them to soups and stews as well. I never let my pantry run out of canned potatoes.

    Just canned up another 7 quarts. 10 lbs fits almost exactly 7 quarts. Smashed home canned potatoes are the bomb when cooked in a Ninja Foodi oven. It uses less oil. I wasn’t a real fan of my home canned potatoes until the Ninja came along. Smash a quart of canned potatoes, season, toss with 1 TBS oil and roast at 375-400 until they turn golden brown. Butter might be good too but I haven’t tried it. Great with eggs or as a side dish! I Love your videos. Have been watching you since 2017! I cannot tell you how much you have inspired this late canning bloomer.

    I canned 13 jars of potatoes today after watching this. I didn't have any Herbs de Provence so I used vegetable broth and 1/2 teaspoon cajun seasoning. I put some in the air fryer and my husband loved them so much he's eating a second jar. I've been canning my whole life and never canned potatoes because I don't like store bought canned potatoes. These potatoes are SO delicious!!

    I canned some potatoes I drained the water and seasoned them with ranch dressing Parmasen cheese garlic and onion powder parsley and put the in the airfryer.They came out good they were crispy on top.

    I really like this and I actually have Herbs De Provence. I love the lavender in it.
    I get my potatoes from a very local farmer plus we grow some ourselves.

    I do can potatoes. We love them. I haven’t done herbs yet. Wouldn’t water work just as well as broth? I have a bunch of thyme and rosemary that I grew and dried. Dried chives would be good too.

    They look very good. It appears that the potatoes stayed in shape and did not fall apart or turn to mush. I am impressed as I did not think white potatoes could hold their structure that well. Looks like my next canning project after I do the Chicken Marsala…..😉

      Well They are yellow potatoes and they did hold their shape really well because I've cause I've tossed the jar's a little bit little bitch to mix up the herbs and they still are holding shape I'll be opening a jar here really soon for you guys

    I have added carrots to my potatoes (sometimes) when I can them. I use them for a quick stew or soup. Layer of potatoes..layer of carrots. One year U added onion and celery. Adds flavor but they more or less disappear into mush from over cooking.

    Great video want to try some ,so you peeled potatoes and left them over nite in pot of water drained in the morning then raw packed them ,,can you do different types of potatoes love the music

    Love it! Yes, I'm inspired to do some of these, too. Thanks for the inspiration. I did spinach a few days ago. My second harvest of green beans are in the canners right now. I'll do the last tomorrow. Then, it's on to caramelized onions. You know, in Ohio the apple season is starting. All that comes soon. xoxo

    I just did this tonight! My house smells WONDERFUL! My husband asked what I was cooking then asked if he could have some tonight. We’ve already had dinner! 😄 Can’t wait to try them!

    That’s exactly what happens to me when trying to get the jars out! I now use a wooden flat spoon to finagle the jars to get that thing around the neck of the jar. I’m brand new at canning, one week old, and I feel better now!! Lol…it’s like crutches in my hands, and end up holding tight on the sides of the jar lifter upper…..LOL…. whatever works right?? I also wasn’t sure what end to use too…ok, your using the smaller end….duh!! I’ll do that next time. I’m doing my potatoes over the holiday..Thank you!

    Oh my goodness, those canned potatoes look good! I just ordered some herb de provence and as soon as it’s here I’ll head out to the farm to buy my potatoes! I’ve never canned potatoes specifically, only in stew, but they are delicious in the stew. I’ll be anxious to see the ways you use them. I think they’d be delicious in a cream sauce, using the broth.

    I'm glad you had a hard time getting those jars out lol, I thought I was the only one! 😅
    I haven't decided if I'll do more potatoes this year. I love them for soups, that's really all I have used them for and we don't use them often.

    Maybe try canning carrots with 2-3tsp french onion soup mix. The mix makes them taste like they were slow roasted in a stew or roast. They are quite soft, but that's how I like them. They will make quick dinner with ugly chicken or beef!!!!

    How did you keep your potatoes from turning brown before you canned them!? Was it bc they were covered in water and in the fridge soaking?

    My first batch of potatoes 2 yrs ago I did not know about the rinse & starch! So they sealed but bottom has the cloudy starch Should I toss them???

      No don't toss them just to rinse them off

    Let us know if they taste better since you soaked and rinsed them quite a bit. I would like to know if there was a difference in taste

    I’m confused, I thought if using chicken or beef broth I would increase the canning time to the meat time. Thank you in advance.

      Donna, I am canning my potatoes today so I looked up the potatoes in the New Ball Book of Canning to double check....it does say with either chicken or vegetable broth to can quarts 40 min, pints 35.

      @@donnaestle7 I'm still learning after almost 15 years! And I'm glad you asked the question for me to look it up and confirm for myself. :) Finished my 4th batch tonight and taste tested both plain and herbed...very happy with both! (this was my first time canning potatoes)

    Linda have you ever tryed to cover your jars with a towel to let them cook down slower ? I see Italian ladies can their tomato sauce and do this .

      That’s an old method, according to newer procedures you shouldn’t slow down the process as it can cause flat sour in your canned foods. Unless you are canning in a very drafty area or outdoors it’s not necessary.
