Can you change the darts to gathers along the side seam the same way but distribute the gather along the whole length of the side seam? I saw a picture of a top that I want to replicate that was just gathered along the side seams and no darts anywhere on the front piece.

Yes - this could work - you may need to experiment with a toile / muslin first.
