my understanding is that Ufotable doesn't want to step on the original anime (which is, mostly, a take on the Saber route). which is unfortunate, as i likewise wish we had a solid Fate Route adaptation, so the viewing order would be best (as the Saber Route does allot of ground-work for the other two routes). hopefully, someday, we will get a movie series or the like at least.

That would require a few things to happen. First, Nasu himself said that he would have to rewrite the Fate/Stay Night Saber route first to meet his higher standards today. Next, ufotable needs to make enough money to retread familiar ground. Finally, it would be best if Kenji Kawai was invited again to compose for the series or films.

Well they are reunited in the end actually. Archer in the anime is actually the future Shiro, and he becomes a hero and when he dies he goes to Avalon, there he meets with saber once again. This is the ending in the visual novel, so they are tigether in the end.
