Making Acorn Flour in the Ultimate Primitive Kitchen

- The acorn is probably the most valuable survival food in this region, however it is not safe to eat in large quantities unless it has been processed properly. In this video I show my primitive technique to get the most nutrition out of your acorns using stone age kitchen tools that I crafted myself. Most acorns naturally contain high levels of tannic acid which are not bad in small quantities but larger quantities can work as anti-nutrients in the digestive system and actually inhibit the absorption of essential nutrients. Running cold water through the acorn flour is the best way to preserve the nutrients, including the fats, and produce a good acorn flour that can be used in cooking meals.

Who films you?
I do. I travel alone, shoot, edit, upload, everything.
How many cameras do you use?
Usually I use just one camera. When I have underwater scenes then I also use a GoPro camera. I get different angles by moving the camera around and repeating the action to create a more cinematic viewing experience for the audience.
Where is this place?
In order to protect the integrity of the natural landscape I prefer to be very vague about the locations I use. There are places that I used to visit that were so beautiful and untouched but the consequences of social media brought all kinds of people to visit and sadly some people do not respect nature and have badly damaged these places. Therefore I do not share exactly where I go.
Do you workout?
Yes, I workout, but not in a gym. I have some weights that I use and also do a lot of bodyweight exercises. I also run and sometimes swim. I hike frequently do collect wild foods and to shoot these videos so I'm very active all the time.
Are you vegan or vegetarian?
I wish I could maintain my health on a primal diet that does not include animals but unfortunately that did not work and I ended up with health problems as a result of those attempts. From my studies, observations of nature, and personal experience I have come to believe that the best diet for optimal human health is a primal diet (paleo).
Do you get lonely when you’re alone?
No, I don’t get lonely. I’m actually so busy shooting video, taking photos and doing so many other things like making cordage, cooking, weaving, etc. that I really don’t have time to think about my lonely condition. Sometimes when something profound happens on an adventure I can’t wait to share it with people, but other than that I do not get lonely.

Some years ago in Israel I had the chance to collect wheat from a field that the harvester had missed a little. I sat on a sheet and rubbed the wheat heads between the palms of my hands and let the evening breeze winnow it. Jews who had recently immigrated from Arab countries came and sat with me and joined me. They said they did it this way back in their home country, which included Yemen and Morocco. About a decade or so later I was doing the same thing in Dallas. Mexicans who were from Northern Mexico came up to me and said that where they came from instead of relying on the wind they put the seeds in water. The seeds sink, the bad stuff floats. Thinking of it now, I suspect they were remembering acorn flour processing. Putting what you grind up into water would work well with acorns since the acorn flour must be leached anyway. But I don't think wheat berries like water too much; to make them into breakfast cereal you must soak them overnight. And if you smash them and get them wet they turn into dough.
What great experiences those are. Rotten acorns would definitely float. The flour sinks when it's wet.
It's good to soak wheat berries to remove the antinutrients.
@@ChadZuberAdventures What the Mexicans said was so close to what you are doing with acorn flour that I can't help but wonder if that was where they got it from? Certainly it is starting to appear that you have a lot of acorn flour lying around and one comment in a caption mentioned you are eating quite a few acorn pancakes now, and they are good to eat. You can't fake that third bite. I've never heard of Mexicans talk of acorns and when I've talked to them they have trouble with the word acorn (bellota) which came up because the oaks in Dallas have acorns the size of golf balls. I never tried to eat them.
But their suggestion of using water to winnow sounds like it could be a glimmer of a past and you are showing just how rich and productive that past could be. Your acorn country could have held many hundreds of people living like you do.

The acorn larvae are good to eat. It was for us a special treat when we'd find them. They're very small and taste like a mild soft acorn.

Leaching them in a loosely woven bag in a small creak works as well. Leach them in the flow of the water for a few days. Then let them air dry and then parch them over a fire. After that the skin comes off easier and it is much easier to grind into flour.
I did that method once. I left the acorns in a basket in a stream for a week.
@@ChadZuberAdventures it's good after about 3 days. But it's a lot easier than leaching it when it's been ground.
@@ChadZuberAdventures also of you want the flour to be a bit sweeter you can add pine nuts to it if you know when your pine trees seed.

Some species of oaks have high tanin in the acorns and require a soaking to remove the bitterness. This tanin brine can be used when processing hides. I'm assuming the acorns you are using require less effort than what grows around me. Going out this year to collect acorns and beechnuts for some more natural flowers. Thanks for the inspiration Chad, you're a hero of mine.

Chad, have you ever tried our thought of trying to make a waterproof basket? Your weaving has come on in leaps and bounds, it looks almost up to the point of trying for that. I've always wondered how good weaving has to be to become waterproof. Of course it leaks a bit until the fibres swell, but in many of the less ceramic cultures in the world, waterproof basketry was often used. I'd love to see you giving it a go. Love your work as always!
Thanks Alyssa! I made this basket with a tight weave but it's not able to hold water without leaving. However, after leaching acorns in it the material swelled and it almost became water tight. Some people used to coat there inside of their baskets with asphaltum or pine pitch to make them waterproof. I may try that.

I hadn't known that leaching was done that way, drip by drip; I thought the acorns were just left underwater whole in a submerged basket, probably both methods would work. I would modify a fire-drill (with orbital weights and grinding tool bit) to grind up the nuts.

That's a great method to leach the tannins ! Would submerging in a stream also work? A few of your acorn cakes you shared with us at the nature reconnection outing would have came thru this past weekend hike! Baskets and clay pots are the next projects il be working on. You should hold crafting courses I'm sure a lot of people would be interested in learning first hand from you
Yes! I've placed acorns in a running stream for up to a week to leach them. I like this method much more... I have been thinking about having bushcraft courses soon. I would really enjoy that.

It certainly does not taste like anything from IHOP. Acorns alone don't have much flavor. It's what you mix them with that gives flavor.

It's difficult to answer that question. It depends much on the location you go to. Some important skills are fire making, shelter building, food and water acquisition, tool making.

I wonder why you didn't invest some time into making a flat grinding stone to make flour for this project. Seems like alot of acorns for a small mortar and pestle. Maybe next year?
It would take me a long time to make a large flat grinding stone. The stones here don't seem ideal for such a project.
