I ended up resorting to a pressure cooker. Furthermore, I appreciate the chef's insight regarding avoiding the use of Kewda and Rose water. Excellent, Chef!!! I tried this yesterday and by far the best Hyderabadi biryani I have had. So simple, and relatively quick. I made it in a cast iron braiser since I don't have a lagaan. After the first dum, I thought the mutton needed just a little more cooking. So kept it on high again for 5 min and then low for 15 min. The bottom burnt. I will adjust cooking time next time. The taste was awesome! Thank you!

For those who are uncertain about cooking the Mutton in quick time. Please marinate it and keep it for min 3 to 4 hours. Best would be to keep it overnight in the fridge. You just need 30 min of cooking time for Hyderabadi Mutton Biryani. But remember, it should be tightly closed, vapors shouldn't fizz out from anywhere.
Hello chef Khursheed!!! This is one of the simplest and tastiest Hyd biriyani recipe I have ever got to cook!!! I tried this with chicken and it tasted better than the restaurant version and was simply delicious!!! Thanks for taking time to explain this method of cooking!!
Thanks for this recipe, I have tried this and the flavour was spot on, however the lamb pieces did not cook to perfection, it was only about 75% done, I guess the cooking container I have used (30cm tubular) and relatively large pieces of lamb shoulder I used (6-8 cm thick) might be the reason. But I am not giving up :) next time I will try 10min high flame, 30mins low flame and 20 min rest, see what happens!
