Which rice have you used here ? My benchmate who was from Kerala used to bring these appam , nd we all used to just grab appams from her tiffin🥟🥟 . Few months back when my mom tried these at home , these turned out good but not great ,🙂🤦🏻 later she said you must've used different rice 🍚 . Pls let me know which rice we can use

We can directly pour a ladle of batter in oil and deep fry. That is the conventional method. Now with this nonstick mould everyone wants to use less oil. But the deep fry version is the traditional method and that taste would be awesome. The appams will be much more crispier too. Thank you 😊🙏🙏🙏
I think you are correct about the names as they are used in the beautiful land of Kerala. But, in the equally beautiful land of TamilNadu, sometimes, this is referred to as a nei-appam, or simply, appam. As to the pan, it is sometimes referred to as "painyaram" in TN, and as Aebleskiver in Denmark. What is in a name brother or sister? Thank the good lady for putting together, and enjoy!

Any raw rice is good for appam. I used basmati, you can use ponni or sona masoori 😊🙏

adding Banana's make the paniyaram soft. but not very soft when we add baking soda
If I prepare the batter today and used it next day - will it produce nei appam as it would be prepared from fresh batter?
If we keep the batter for a long time, the jaggery in the batter makes it more watery. So I advice to prepare batter fresh
Can Nei appam batter be prepared using a table top? or it needs to be prepared in mixer only?
I use Preeti mixer grinder. We don't need wet grinder for the batter

If you add baking soda, pls do not rest the batter. Appam batter fermentation is not mandatory

rice flour will not be as good as soaking rice and grinding it

yes we can do. But some jaggery has sand or dust thats the reason I prefer boiling and straining.
mam can we take rice powder
most of the time rice powder doesn't work so I personally don't recommend for appam

Just tried this recepie. All appams got stuck into the molulds. Didn't separate out at all 😪 I used traditional castes iron mould.
For Traditional caste iron mould, we need to add more oil or ghee then the appam will automatically flip to other side
its not neyyappam ,its unniyappam
Both are same.. in malayalam it is unni appam.. in tamil it is nei appam..
