Molokhia or jute mallow so delicious

  • Molokhia is a delicious stew enjoyed through out the Middle East. It dates back to ancient Egypt, it belongs to the same family as okra so it can be a bit slimy, often eaten next to rice but there’s other variations. I highly recommend you trying it
    Ingredients:
    1-2 chopped molokhia @tazah
    1 whole chicken (3-4 lb.) quartered, back bone reserved
    1 small onion diced
    2tbs. Olive oil @tazah
    1/4 tsp. 7 spice, 1/4 tsp. cinnamon, 1/8 tsp. black pepper, bay leaves and salt to taste
    5 cups water
    1 head garlic pealed and chopped (fine)
    1 tsp. Ghee @tazah
    1/4 tsp. Coriander (ground)
    ▫️in a pot sauté the onion with the oil and spices for 30 seconds, add the chicken back bone and cook with the onions until it changes color, add the water and cover to cook. This will be the base for the molokhia
    ▫️preheat oven to 400 F.
    ▫️arrange the chicken in a baking dish, drizzle with olive oil and sprinkle with the spices generously (7 spices, cinnamon, black pepper, paprika, salt and a dash of cardamom) 2 tbs lemon.
    ▫️Massage the chicken well the spice and oil,
    Add 1 cup water. Cover the baking sheet with parchment paper and foil
    ▫️bake for 30 minutes covered then another 30 minutes uncovered (use some of the drippings in the broth
    ▫️remove the chicken back bone from the broth, add the chopped molokhia and cook for 10 minutes uncovered stirring occasionally
    ▫️fry the garlic, coriander and ghee this is what we call (Tasha) until golden add to the molokhia and cook for another 3-5 minutes. Serve molokhia next to vermicelli rice and the roasted chicken
    Green sauce: is a great addition to any molokhia dish, in a food processor add 1 tsp. Garlic, 1 jalapeño, 1/2 bunch of cilantro and process add to lemon juice and enjoy
