There are always 2 brake pads afaik, just like a car or motorcycle. One brake pad is fixed i.e. doesn’t move, the other brake pad pushes the brake disc against the fixed one. As for putting the old brake pad inside, I have watched the video again and I don’t think I have put the old one back, I think the second old brake pad was out of frame.
