    Sigüenza is a city strategically located to control the passage of the upper Henares and the valleys of the Dulce and Salado rivers. This is the reason why it was populated since the Paleolithic and Neolithic.
    Visiting Sigüenza is visiting history in each of the folds of time. Behind the vestiges of ancient settlers: Celtiberians, Romans, Visigoths and Arabs; A medieval Sigüenza prevails that captivates the eye already in the first general view.
    The castle dominates the city, the postcard and contains in its foundations, which rise to its battlements, secrets of its inhabitants, which were all of them. La Casa del Doncel, a must-see; The church of San Vicente or Santiago, the remains of walls interwoven throughout the city; the cathedral, with its imposing interior of vaults and mausoleums... complete the puzzle of this period.
    Its Cathedral is an essential visit. The roast lamb or goat are notable; the migas accompanied with chorizo, torrezno and fried egg; the Castilian soup; hunting or slaughter products; pickled trout or with ham and, as desserts, you cannot pass up the Doncel yemas, the drunken biscuits and those made with honey. Since 2017 it has had a Michelin Star in the El Doncel Restaurant.
