Yes. This type of tip is very useful for those who are following the instructions to get the Cacio e Pepe right at home. Too salty to use pecorino cheese alone can be mixed with Parmigiano. Water with salt will also change the saltiness of the pecorino and lastly, the region where pecorino is made will also depend on the saltiness of the cheese. Good tips from this video when a non-native like me trying to emulate this dish. Thank you for this type of video.Kudos.

Sounds so simple and delicious. I'm from Pennsylvania in the US and some of our local butcher shops carry some cheeses that actually have a lot of ground pepper inside them. They are good but the cheese seems to mellow the pepper out a lot so I still recommend some fresh ground pepper. I wonder how a little lemon zest added and maybe some chicken would be. Kind of a lemon pepper chicken goes pasta dish.

@Vincenzo’s Plate Vincenzo I’m going to Rome, Florence, Naples, and Sorrento in about a week. Do you have any other great restaurants I should try out? Any tips you have when exploring Italy for great restaurants?
Vincenzo, honest opinion I wanna ask, since u have tried Ragù, Carbonara, and Cacio e pepe during ur visits to Italy, which is your most favorite if you must choose? Your answer really help me in case I go there
Hey there! 👋 If you're planning a trip to Italy, you should definitely try all three of them! But if I had to choose, I would say that Carbonara is my personal favorite. Let me know what you think when you try them all! 🍝
Thanks for the tip! I actually love using Pecorino Toscano in some of my recipes, it adds a unique flavor. 😋 Do you have any other ingredient suggestions?
Bellisimo! I love Italian food and this is a good and simple dish to make. Carbonara is complicated but Cacio E Pepe is probably the easiest Pasta dish to make ever. I also like to add Olive Oil it gives it a nice balance. I respect Italian tradition but it's not preticulary important for me to make Italian dish in a traditional way. Because I am not an Italian I am Israeli so I modify to my flavor and there is nothing wrong with it because I keep the basic rules. There is no right or wrong as long as you keep the base, like Vincenzo himself said- "You can do whatever you want food is very personal." I understand why I choose Parmigiano because the Pecorino here is in bad quality. I want to visit Roma and to eat the real deal looks amazing.
@@MatthewSchellenberg When it's Carbonara- Parmigiano instead of Pecorino, Salami/Goose Brest instead of Guancale which I can't ever find and that's it. Pepper, Eggs and Pasta are as normal. For choice Pasta I use Linguini. As for Caccio E Pepe again Parmigiano and white Pepper instead of black. Although sometimes I do it with black as well but white Pepper has a magnificent flavor.
Hey there! 😊 It's great to hear that you enjoyed the recipe, but please keep in mind that traditional Italian dishes have specific rules that should be followed to maintain their authenticity. Modifying a dish to suit personal tastes is understandable, but it may not be considered an authentic Italian dish. Either way, I hope you get to try the real deal when you visit Rome! 🇮🇹
@@vincenzosplate I actually did make it and the entire family did enjoy it very much. I couldn't use a lot of pepper because of the little ones but it was very good. I will admit I forgot to place the flame on low ; nothing was burnt but the cheese did clump. I managed to reduce it with a touch of cream and a little pasta water. I will just have to practice some more.
The nice thing about these Roman cheesy pastas is that they are low in lactose, unlike macaroni chese and stuff like that. My mum has difficulty digesting lactose and has no problems with cacio e pepe.
Hey! Thanks for the suggestion 😉 I’ve actually heard about Luciano and his carbonara, but I haven’t had the chance to check it out yet. Will definitely make a visit when I can! 🍝👑👨🍳
What a great video chef, I like the second restaurants approach to making this, it’s how I’ve always done it and it always works, I feel that the first restaurant uses a lot of cheese, maybe on the line of a little too much, but it did look so good, but it didn’t seem to have the balance that the second version had, am I right about that? Thank you for the great video. 🇮🇹😎🇮🇹
@@vincenzosplate Absolutely, and in Carbonara I would only use Pecorino Romano, I’ve seen others use Parmigiano Reggiano, or a blend, I’ve tried this and for my taste it just doesn’t seem correct. 🤷🏽♂️ Thanks Chef.
So the procedure is done with cheese, hot boiling pasta water, warm pasta (not too hot cause we wait 10 seconds before we put them in the pan) in a COLD pan? Please, Vincenzo reply me, all I want to know is if we ever put the pan on the stove, in the first way

@Vincenzo’s Plate Vincenzo I’m going to Rome, Florence, Naples, and Sorrento in about a week. Do you have any other great restaurants I should try out? Any tips you have when exploring Italy for great restaurants?
you should check my series about Naples
Vincenzo, honest opinion I wanna ask, since u have tried Ragù, Carbonara, and Cacio e pepe during ur visits to Italy, which is your most favorite if you must choose? Your answer really help me in case I go there
Hey there! 👋 If you're planning a trip to Italy, you should definitely try all three of them! But if I had to choose, I would say that Carbonara is my personal favorite. Let me know what you think when you try them all! 🍝
That cooling spaghetti tip was excellent. Struggled with getting strings unless i was lucky.
Are you going to try?
@@vincenzosplate Neext time I buy Pecorino
I recommend using Pecorino Toscano if you want it less salty than Pecorino Romano without resorting to using Parmigiano Reggiano.
Thanks for the tip! I actually love using Pecorino Toscano in some of my recipes, it adds a unique flavor. 😋 Do you have any other ingredient suggestions?
Bravo! But I like the way you make it even better.
Grazie my friend 🙏
The very first meal I got in Rome was a cacio e pepe. I'll need to visit again after this
And don't forget to check out these locations.
Tomorrow I’ll go to Pantheon Restaurante and I’ll say : hey , I’m Vincenzo’s friend ! :)) I’ll keep you updated dear maestro Vincenzo!
Just came back from Rome on Friday, could've used this video a week ago ;)
Hey there! Hope you had a great time in Rome! Next time, don't forget to check out my channel before your trip 😉🍝🇮🇹
How do you modify it?
@@vincenzosplate Thank you Vincenzo I love you and Italian cuisine and Roma which I was there only once hoping for more.
Looks great ❤
I hope you enjoy this!
Bravo!!!
Glad you like it!
The nice thing about these Roman cheesy pastas is that they are low in lactose, unlike macaroni chese and stuff like that. My mum has difficulty digesting lactose and has no problems with cacio e pepe.
Very nice sharing 👌
Thank you my friend ❤️
تو معرکه ای ، عالی هستی
Many thanks to you, I'm glad you loved the video!
Have you ever tried Cacio e Pepe?
I found the boiling setup to be most interesting. Never ending boiling water with little baskets of pasta you can drop in and out. Brilliant
Thanks for watching and sharing your thoughts! It's definitely a traditional Italian way of cooking pasta in restaurants 👨🍳🍝
I am crying i need all those cacio e pepe!!!!!!!!!!!
You can make one for yourself, you can search up the recipe in my channel.
I'm drooling right now. 😛 So few ingredients and so appetizing. 🍝🍷 Fantastico.
Thanks for the love 😍👌 Hope you try the recipe and let me know how it goes!
Me: "I wonder why my cacio e pepe isn't as creamy as what I see in the videos".
4:52 : "oooooh".
😂😂😂
Looooove this!!!!!
Hey there! Thanks for the kind words and support 🤗 Always happy to share the authentic way of cooking Italian food 🇮🇹🍝👨🍳 Keep enjoying the videos!
Looks amazing!
There’s a place called Luciano by chef Luciano Monosillio, he goes by the nickname of the king of carbonara! Check it out next time
Yeah true, but in Carbonara the more cheese there is the better in my opinion!
Everyone must try this Cacio e Pepe!
oh yes, absolutely!
So the procedure is done with cheese, hot boiling pasta water, warm pasta (not too hot cause we wait 10 seconds before we put them in the pan) in a COLD pan? Please, Vincenzo reply me, all I want to know is if we ever put the pan on the stove, in the first way
Ciao! Here you can find my recipe for Cacio e Pepe. Here you can find all the steps you need to follow www.vincenzosplate.com/cacio-e-pepe-recipe/
@@vincenzosplate Thank you!
Ugh it's torture for me (on a diet) to watch this! I tried this dish once in my life a year ago in my country Lebanon, it was so delicious and can't wait to try it in Italy someday!
Hey there! I feel you 😅 This dish is definitely not diet-friendly, but it's worth trying once in a while. I hope you can come to Italy soon and try the authentic version.🇮🇹 Cheers!
I discovered Caccio de Pepe in Florence, wonderful. Not tried making it yet though!
awesome! Was it authentic? 😋
You should try making it too
@@vincenzosplate I have no idea if it was authentic as not had it before but it was delicious and I bought some of the pasta used to bring home
Grande! 👏🇮🇹
grazieeee! Non vedo l'ora di tornare a Romaa
Vincenzo, I would like to cook this with pasta pici.
which flour do recommend for pasta pici? 00 or semolina? Or mix of them?
I think i may have an addiction to this dish !! I make it once every week for myself! 😂 i just find that the cheese sticks very quickly the pan which im not sure why !? I even switch off the heat and then add the cheese but it still becomes stringy and lumpy
If I could go to Rome I would and taste everything 💚😘🍽😘💚
I hope you'll be able to come by soon!
Vincenzo, you have to go and eat cacio e pepe at Roma Sparita in Trastevere. It is where the locals go, not the touristy restaurants in Rome. And It has to be one of the best in Rome.
Thanks for the suggestion! I appreciate it 😊 Have you tried making any of my recipes before?
@Vincenzo's Plate Yes, i have followed your channel for quite some time now, and i make some of your recipes like tomato and ricotta pasta, tuna pasta, and carbonara but with pecorino sardo
Good morning Vincenzo!
Good morning to you! What do you think of this new episode? 😍
Excellent!! Vincenzo, can you give us a recipe for tonarelli?
Sure! I'll make a video about it
Any chance for a new video on how to make Cacio e pepe? What do you think about using fresh tagliatelle for this dish?
That is on our list, stay tuned for an updated recipe soon!
I know all the real good local spots are away from the "tourist traps", but can't beat having a dish at The Parthenon, Coliseum or The Forum
you're absolutely right.
Di Rienzo is the perfect compromise!
Like Carbonara without the eggs and guanciale. Gotta try this one.
I'm glad you're intrigued! This version puts a unique twist on Carbonara. Give it a try and let me know how it turns out. Enjoy! 🍝😊
my kind of pasta, just cheese and pasta... yum.. Gona try and buy some Pecorino and attempt this, tho it $20 170g in NZ, but hey it'll be fun and I hope delish..
Hey there! 😊 Pecorino is definitely worth it for the authentic taste! Can't wait for you to try it out! 🤗
One of my favourite pastas
😋😋😋
You just helped my depression today Vincenzo
Ahaha why?
@@vincenzosplate I've been in the hospital for the last week with depression you made me laugh
Looks good although I prefer dried pasta as you are able to do Al Dente easier
Love watching you experience other chefs cooking.
Glad you enjoy it!🙏🏻
Awesome!!
Thank you a lot 🙏🏻I'm super glad you enjoyed this video!
Have you ever been to Rome and ate the real Cacio e Pepe?
@@vincenzosplate I have not, but would love to go! Especially for the food!
Salve Vincenzo. What is the name of the pizzeria at the beginning of your video with the pizza bianca and mortadella please?
Here is the name of the Pizzeria beside Fuocolento, 50 kalò di ciro salvo.
