Did you know Scotland has ANOTHER national drink? IRN Bru! Its so popular with the scots that it actually outsells Coke! So I decided to distil it. Why? Well, why not. But also there seemed to be something poetic to distilling Scotlands other, non-alcoholic, drink! Will the flavours carry over? Will it even be drinkable?

I seem to recall a lot of Scots bulk buying Iron Bru in the run up to a change in the recipe around 2018 when Barr reduced the amount of sugar in Iron Bru to avoid Iron Bru being subject to the sugar tax introduced that year in Scotland.

my best mate is Scottish and he introduced me to irn bru a couple years back, and ever since I'm always exited to find a shop that stocks it.
Never heard of Irn Bru until this morning, not here, but on one of Brewbird’s early videos “Bacon Roll & Gin Cocktail” She made a gin drink with Irn Bru and an orange slice.

I did this with mountain dew and it surprisingly worked, we let it decarbonate for an hour, and added some brewer's sugar (the sugar in soft drink is a pain to ferment) then the yeast and it worked really well

I had never even HEAR about this soda till both you and Roy talked about it. Granted I have never been to Scotland but I'd never imagine they had a specific soda. Irn Bru and Dandelion and Berdock are both widely available in southern Ontario Canada.
You can get this all over the UK - I live in South England and grew up on this stuff! You can get an alcopop version too!

I'm surprised at the results! Our HEB grocery (Texas) often carry irn bru in the international aisle. I've had it a few times and it's ok. It reminds me of the results I got as kid taking a splash of everything in my cup at the soda fountain, including the diet soda. Suicide soda or rainbow soda hahaha Irn bru has a bit of artificial sweetener in it too, I figure that would hinder fermentation. I'm really glad you tried this out and had a run at stilling it!
Yeah we called it Suicide too here in Miami FL in the 90s. I think it's crazy that every region has a different tern for it.
U.S. here. I spent some time on the Air Force Base on Ascension Island. They had IRN BRU at the grocery in Georgetown, and I wish I could find it back home. :)

Have you ever thought about fermenting alfalfa? I like to see that.
So weird just put down a coke, cola cordial, blueberry pop-tart, marshmallows wash.
Was a bit slow going in the beginning but is roaring away as I type.
Also have a frosties,arnotts biscuit multi pack, nutrigrain, crunchy nut wash going simultaneously and that took off like rocket instantly.
Probably going the combine the washes in different ratios
I've been an expat for nearly three years now, living in the US with my American husband after spending most of my life in Scotland. I miss so many things about it, but I'd be lying if I said Irn Bru wasn't one of the things I miss most. Heck, but I'd forgotten about the "Irn Bru gets you through" ads. I miss Irn Bru ads a lot now, as well!
The end result looks like a fascinating thing, though. The sort of thing I wish I could get the chance to try once, even if never again!

I have a small pack of Irn Brew here in the States. Its hard to get here and bloody expensive when you can. Which is weird since it originated in the US way back.

The original recipe irn brew in the glass bottles would have a lot more sugar but it’s very expensive and hard to come by even in the UK.
Jessy try distilling the irn bru to essence to get concentrate oils and add to clear alcohol for flavoring? Maybe!
Coca Cola is the #1 selling soda pop in every country except Scotland. Irn Bru is the #1 non-alcoholic beverage and it is ubiquitous in Scotland. You can buy it in the USA through Amazon. It tastes like orange bubblegum.
I think it was BigClive who mentioned his favourite mixer was IRN-BRU and with a blended Scotch whiskey, which is apparently called a "Girder"?

You need to try and distill Detroit's most famous soda, Vernors ginger ale. its a wonderful, strong ginger ale, with vanilla tones. it would make an absolutely smashing spirit.

Last time I came across Irn Bru in the states was a few years ago at the highland games organized upstate NY and there the Irn Bru was nothing like the Irn Bru I grew up wi' in Glasgow then it was really good. Made in Scotland from girders.
They cut 60 % of the sugar out of mainstream iron bru about 4 or 5 years ago. I've heard that you can still get the original.
@@stuart207 In the US you can get the original recipe with no artificial sweeteners at Publix.
You mentioned getting it as a concentrate to use for the higher sugar count, have you tried/considered getting it as a postmix instead of a can? i know you can get irn bru postmix over here in england, it only comes in 10L BIB's (bag in boxes) but they are normally concentrated to be diluted down in a ratio of 5:1 sometimes higher and are for use in bars/restaurants.
The first lot of yeast probably failed because of 2 much CO2, next time leave for 24 hours after opening or blast it with a hand blender to knock out the gas. And it's popular in all of Northern England as well, I got a few bottles here with me 😊

@@StillIt oh and soda stream do an irn bru concentrate, and if you can get it out there then irn bru 1901 has a much higher sugar content than the regular stuff. Failing that then there is also an irn bru extra that has a lot more flavour but is sugar free but if you make a load of invert sugar (made with a cup of i.b. instead of lemon juice) and aim for around 8 or 9% abv it also works quite well. And as u done Dr pepper and irn bru now, why not a coke v pepsi challenge ☺ , happy drinking.
I mentioned it in another comment but Irn-Bru contains a food preservative and those are designed to inhibit things growing in the drink. Fermenting anything with preservatives is a challenge for the yeast.
In England we have an alcoholic Iron Bru called WKD and it’s around 5%
We use Kveik yeast for farmhouse ale's. How much impact do you think that might have had in the final product?

You're right. I've never heard of IRN Bru. (Midwest USA.) Am intimately familiar with scotch, though...
Is IRN Bru carbonated? Initial ferment may have failed because of the carbolic acid lowering the pH to far. Once the CO2 escapes and the pH rises may be why your second addition of yeast worked.
I looked into fermenting Coca-Cola, but I think the pH is too low. I should actually try it, lol...

Probably about the same. Not a lot of unfermentable sugars / carbs in this (if any) thats where the yellow label shines :)

I noticed in the last 2 videos you've been kicking your video production into high gear with new angles and such, things also look more... contrasty. Really awesome to see, and inspiring!
That said, on to the actual content. I imagine the reason why it didn't ferment the first time, but did the second time, is a combination of pH and nutrients. Irn Bru has a pH of 3.0, a bit too low for most brewing yeasts. So I imagine the first batch of yeast died, that raised the pH a bit and also provided a source of nutrients, also if you used tap water to make the yeast starter the salts in that would help raise the pH. Although the hardiness of Kveik yeast can't be denied, I mean it is a Viking Yeast, and it definitely played a role in getting things done.
The ABV issue is the result of Irn Bru lowering the amount of real sugar in Irn Bru in 2018, from 10.4g/100mL to 4.3g/100mL, to get around a +5g/100mL sugar tax in Scotland. They supposedly changed back to the 10.4g/100mL recipe this year, in March, due to customers wanting the old recipe back. So you were probably dealing with the low sugar version which has 14.2g of fermentable sugar per can (330mL), or 426g in 9.9L (from 30 cans). The math sorta confirms that, 43g/L of sugar will give you around ~2.2% ABV.
So if you ever try it again, hopefully you get some of the new stuff that has a higher sugar content!

I worked with a bunch of Scots a few years ago. I got side-eyed something fierce when I brought in a Coke with my lunch. The lunchroom fridge was stuffed full of IRN BRU. Tried it once. Not bad, not my jam though.

Anyone else noticed that Iron Bru doesn’t taste like it used to? They changed the recipe at some point but not sure when.
January 2018. Halved the sugar because of the UKs soft drink levy.
Recipe changed: Some many people bitched about obesity and sugar and then didn't realize that it would affect the stuff they enjoyed too lol.
Irn Bru 1901 is supposed to be similar in sugar content but not the same as og regular.
An idea. If next time you find another soda you want to destil, im thinking its best to totally degas the wash first of carbon and then try to get loads of oxygen in it instead before pitching yeast. my theory is the yeast didnt have the oxygen it needed to procriate, and maybe why it struggled to start?
C02 is literally a waste product for them too. I did give it a good thrashing in the fermenter. But as someone else mentioned, I probably could have waited for 24 hrs then gave it another thrashing.

The comments about Buckfast got me thinking. What if you took a sweet fortified wine like Tawny, dilute it down so the yeast can better tolerate the abv and ferment out the added sugar. Then re distill the end result to get a bastard child 2nd generation brandy.

Which recipe do they sell over there? I think you should have used the Irn-Bru 1910 with has sugar, aren't the tins sweetened with Aspartame, Acesulfame K? There was a big controversy when they changed the recipe to reduce the sugar content, so the 1910 is supposed to be the original one. Of course, what it really needs is to be served with a deep fried Mars bar.

I'm guessing the low abv was due to the CO2 content in the irn bru itself. Probably inhibiting alcohol production, aside from the likely low sugar content (in comparison to say an all-malt mash)
It pretty much fermented out dry. It was only a starting gravity od 1.021 lol. So yeah, like you say. Sweet to drink, not really in terms of a wash / mash.
Irn Bru changed the recipe of the regular to remove some sugar and include sweeteners.
Irn Bru 1901 version is a "full" sugar one (11g per 100ml compared to the regular version of 4.3g per 100ml).
Probably would have been better off with the one without the sweeteners?
Irn-Bru contains a food preservative. Preservatives inhibit yeast reproduction because that's what they're made to do. Fermenting anything with preservatives is an uphill battle for the poor yeasties. Not impossible as this video proves, but it's more challenging than just dumping a sugar source into water and pitching yeast (and possibly nutrition, such as with mead).
I know it has another national drink because we don't get it anymore and I'm jealous. Plus they even got a limited run full sugar version.
It's far better than coke ever was, it should be a worldwide phenom.

Why was the abv so low? I thought it would have been quite high gravity cause of all the sugar? Different yeast maybe?
They change the recipe recently. The government introduced a sugar tax so they cut it and added more cafine

you should try it again but this time, do it flat. from my understanding carbonated drinks tend to screw up the fermentation because of the very high levels of Co2. you need oxygen to kick start the fermentation then let the Co2 collect, the yeast then utilizes Co2 for the rest of the fermentation.

Most likely regular gaskets wrapped in ptfe tape. I know he has done it like that before.

Unfortunately in bru recently changed its recipe, the sugar content was halved and replaced with artificial sweetners. Luckily the original limited edition 1901 Irn Bru is available again but at higher cost to pay the recent sugar tax charges.

They changed the recipe a couple/few years ago. It was such a big deal that people have stockpiled bottles of the old recipe. Shame you didn't get to use that instead.
