Chef Rose, I love this recipe, thank you so much. This is the softest and the best in my humble opinion among the ones I’ve experimented with. On another note, I have a request, but only if it’s not too much to ask. When I was going to college at the University of San Carlos, there was a pastry store, I think somewhere in the vicinity of Fuente Osmena, or a street called Ramos, they sold a chocolate roll called black princess. It had a filling, tasted like a cross between pastry cream and yema. It had a really light chocolate frosting. I’m obsessed over it, I can’t find it online. I was wondering if you’ve come across it at all. This was in the late sixties, so I’m sure the shop does not exist anymore. I was hoping you might know of it or be interested in developing a recipe close to it. Keeping my fingers crossed here in Maine, USA. Thank you!

Hello chef, I recently bought a commercial convection oven (Venix), I tried to bake your recipe of cheese rolls for the first time using the oven, but it came out dry with brown crust, I already lowered the temperature by 25degrees and even shortened baking time, but it still came out dry and with very brown crust. Do I need steam to achieve soft crust and light color? If so, how much? Thank you. 🙏🏻
Reduce heat by 25-30F. Turn off fan. Shorten baking time. I believe your oven is too hot. No two ovens are created equal. You need to be familiar with how your oven works.
Not this dough. There is too much yeast. If you want to proof overnight, reduce the yeast by 50% and proof it inside the refrigerator. 50% is only a guide. You need to make adjustments as needed.

Hi Chef tanong ko lang po kasi i got a new stand mixer and suggested 2 lang po raw ang speed for dough. In my old kitchenaid mixer, I used the same way as you did. How long ko po iknead kung speed 2 lang po sa mixer salamat po.🙏
I do not knead at speed #2 because it will cause the mixer to blog down since mixing will take a long time. Mixer will overheat by the time you achieve the window pane. Kneading time depends on when you can achieve the window pane.

Not as soft because it has oil. Oil becomes solid when refrigerated. But once you reheat them, it will be back to it's original softness. Thank you for watching my videos!

You can use bread flour but all purpose will make the bread softer. You can use full cream milk or diluted evap milk. You can keep the tanzhong in the ref for as long as 2 days BUT not the dough with the tanzhong already mixed into the dough. I hope I was able to answer your questions. As fas as I know, thrre is no tagalog name for cheese rolls.

They will stay soft for 3-4 days. You can wrap well and freeze and reheat in the microwave for few seconds only.

All purpose flour is softer than bread flour for this recipe. Margarine is alright to use but it does not have the flavor of butter.
