This one-lb meatloaf is ideal for a quick and easy family meal on a busy weeknight. It can be prepared in no time and requires minimal cleanup.

Recipe:
Ingredeints A
1 medium size onion, finely chopped
1 tbsp minced garlic
1 tbsp of yellow mustard
2 tbsp ketchup
1 tsp ground black pepper
1 tbsp salt
1 tbsp sugar
1/2 cup milk
2 eggs
2 cups panko breadcrumbs
1 pound ground beef
1 pound ground pork
Ingredients B
1/3 cup ketchup
1 tbsp sugar
1 tbsp yellow mustard
1 tbsp Worcestershire Sauce
Method:
- Saute the chopped onion and minced garlic with oil for two minutes. Set aside to let it cool.
- Mix the onion, garlic, mustard, ketchup, ground pepper, salt, and sugar in a large mixing bowl.
- Combine the milk and eggs with the above.
- Mix in the breadcrumbs.
- Combine with the ground beef, but be careful not to over-mix.
- Shape the mixture into two loaves that will fit into the air fryer.
- Place the raw meatloaf on a baking tray, then place it inside the air fryer basket.
- Cook the meatloaf at 185°c/ 370°F for approximately 15 minutes.
- Prepare the glaze by mixing all the ingredients in B
- Remove and brush a layer of the glaze on top of the loaf.
- Use a meat thermometer to check the internal temperature of the meatloaf. It should reach at least 70°/160°F.
- Once cooked, remove the meatloaf from the air fryer and rest for 5-10 minutes before slicing and serving.
