Yea flank steak was a good choice but poor execution. Slice it thinly and against the grain, the most important part when using flank. Your temp was perfect, Jon.

Alex, you should never use a metal utensil in a non-stick pan. You will scrape off tiny bits of the coating into your food, and it's not good for you.
