Air-Fryer Turkey Kiev Meatballs

  • When I was in my late teens, I remember Chicken Kiev showing up everywhere. It was in cookbooks, restaurants, and even in the frozen food section at the grocery store. It was everywhere for a while, and suddenly it was gone. I remember going to the trouble of making it quite a few times, and then I quit. I haven't made it in 20 years or so. I was wondering if I could make it with ground meat so that it would be easier. This is my attempt. I had ground turkey, so it is Turkey Kiev Meatballs. It is a great recipe for a home cook and doesn't really require any unique skills. I made them in an air fryer, but they could be cooked in the oven or on the stove just as easily.
    Ingredients
    1 1/4 pounds of ground turkey
    1/4 cup of breadcrumbs
    1/4 cup of chopped parsley
    1 teaspoon of salt
    1/4 teaspoon of black pepper
    4 - 6 tablespoons of room-temperature butter
    3 garlic pods, roasted
    ½ onion, chopped
    Panko breadcrumbs, optional
    Directions
    Mix two pods of roasted garlic, the parsley, and the butter in a small bowl. Place in the freezer for about an hour.
    In a large bowl, combine the ground turkey, breadcrumbs, onion, salt and pepper. Mix well and shape into about 12 meatballs.
    Prepare your air fryer basket with a spray of oil.
    Take a meatball and flatten it in your palm. Add a piece of the frozen butter mixture and cover it with the turkey.
    Dip the meatballs in the panko (optional), and place in the air fryer basket. Spray with oil and cook at between 350 degrees F and 380 degrees F for 12 minutes, turning the meatballs halfway.
    Check to make sure the internal temperature is above 165 degrees F.
    Serve with your choice of side dishes.
