Just discovered & subscribed to your channel. My mother made salmon for us one way - patties. Consequently, I have been doing the same for decades. So happy to see this recipe. Looks like a perfect "breakfast for dinner" option with rice or as some type of casserole ingredient.🥰
I eat canned pink salmon and eggs a lot for breakfast. I never thought to do it your way, but I am going to try that....it looks very good, especially with the grits. Thanks for sharing. God Bless

Fat back drippings is the secret to my Mom’s and it doesn’t matter what I do or what I use mine will never come anywhere near close to hers. It’s a Mom thing😁

This looks so good. In the tiny coastal fishing village of Scammon Bay, Alaska, they make something similar to this, scrambled eggs and fresh-caught salmon (but into larger chunks). The settlers of the area came up with it by realizing they can't have chicken because once they did, that'd be one less source of eggs, and there was tons of salmon, so they combined the two and named it "scammon", some think it comes from "scrambled salmon" but a guy named Scammon founded the town and came up with the dish.

When I was growing up in New England in the summer every other week or so we would have red sockeye salmon in the can with sliced cucumbers and tomatoes and a blob of mayonnaise on the plate. My mother would take out the skin and backbone. We never when I was young used pink salmon because that was used for cat food.
I use that canned salmon instead of tuna in my tuna salad you should make that.
I’ve tried that before too when I had a taste for a tuna fish sandwich but didn’t have any tuna. The kids never knew the difference.
My grand daddy used to make this for supper when I was a little girl, and served it over white rice. I've got to make this!!
