I do teach in Georgia! I went to UGA as well and student taught there in Morgan County... small world! And I appreciate you asking about Venmo or PayPal... the only “tip” payment system I have set up is through Patreon... lots of times folks will just sign up for a month to drop a tip as a one time thing. But definitely don’t feel obligated to do that... I just appreciate the sentiment!

Great question... generally speaking I think heaver strings sound best when tuning down. I would definitely want to be using mediums. As for the brand, I prefer Daddario XT, but that's just personal preference.
