Duck fat might be a little difficult to find and is quite expensive, but it really does make a significant difference. It can be used for many different recipes as well. I spent a small fortune and purchased a significant amount so I could fill my deep fryer with it. I can buy an entire pork center cut loin for less than $30 Canadian. I will cut it in half and freeze one half and roast the other. When I cut the roast into roughly 1/4” slices, I pan fry the slices in hot duck fat for about 5-10 seconds on each side. It doesn’t sound like much, but it takes the pork to an entirely new level of taste.
I agree - it's worth the expense! I always keep some duck fat on hand. I also love duck confit, so I have my freezer stocked with duck and fat! So delicious!
I think duck fat is pretty mild in flavor. Have you tried beef tallow? Remember when McDonald's had really good french fries? they used animal/ vegetable shortening until they succumbed to popular belief that animal fat was bad for you, like the rest of the menu was healthy.
I personally prefer duck fat over beef tallow for potatoes, but I do use both in my kitchen. Seasoning the fat with garlic and herbs is key for adding extra flavor :)
I was scrolling through hunting a Beef stew recipe , and yours caught my eyes,,, I think it said 7 years ago ,,, I believe when something needs to be said , Just say It ! I could tell by the way , you cook ,,, that you actually know what your Talking about ! But I've got to say ,,, I was absolutely not ready for a stunningly gorgeous woman , to be doing the recipe ! I've watched a lot of Cooking Vids. But without a doubt , you've got to be the prettiest , I've ever seen !

But these are about as good as roasted potatoes get. The par boiled technique is a great method. One more side dish before Christmas from you and I'll have my whole Holyday menu. I remember the Chef would trim up the ducks and put the fat in a stock pot with water and boil it until some fat rendered and the water evaporated then chef lowered the heat and let it cook until the fat rendered completely and we had a pot of fat cracklings. whats the advantage of duck fat over using other fats?
It has a mild poultry flavor that pairs really nicely with potatoes. You can also use avocado oil, but it has essentially no flavor.
