Quite a lot do. This video just happens to have caught several manual locos. On the loco at about 3:50 you can see a servo linkage going down to the servo under the cab floor. I have live steamers the same size with the regulator, reverser and whistle all RC. Really nice video, the owner of the blue Roundhouse Bertie and pseudo GWR carriages is a friend of mine and will be pleased to see good footage of his models.
When people evolve and realize there's more to hobbies then dumbass rc cars they find themselves getting hooked on better things to spend their money on. Trains and slot cars, even rockets hands down are worth the time. Live steam is nothing new- tons of videos on RUclips on the construction and running of these little trains. Hornby years ago even offered live steam in h.o. scale years ago.
I try to cover anything vaguely RC related and I've seen RC used in model trains. Nothing is 'dumbass'. Folks pick what they enjoy doing. Don't label other hobbyists just because you don't enjoy what they do.

These live steamers are very cool but how much better would they be with a servo and a receiver mounted in them?
Not sure there is the space to add more gear...and it gets very hot. I know cause I out my action camera on one of the locomotives

That's what most of the larger scale live steam have- they've been using rc bits for decades now.
