Best way to eat potato from Russia: clean out, boil, drain the water, add egg, butter and milk (salt and pepper) and crush it all together to the purée. That’s done :)
That potato “salad” with mayo is a czech specialty! We eat it with fried carp on Christmas Eve, it’s a tradition a lot of Czech people still do to this day 😁

Did you ever try freezing mushrooms? If you cut to desired size, and cook down in butter, once the liquid comes out of them, stop cooking and freeze in deepish containers, the liquid will protect the mushroom solids while frozen. Cooked mushrooms also take up less space. You can put frozen mushrooms in the refridgerator to thaw out all day or overnight, or put into a hot dish still frozen. I like mushroom gravy on steak. Or mushrooms thickened with cornflour on toast, with herbs of choice. Mushrooms are great in stroganoff. You could also dry some for later.
Hash browns are usually cooked as ovals, like pancakes, easier to turn, not needing to be cut apart. We are used to celery finely chopped in ours. Have you ever dry baked potatoes? Scrub, leave skin intact. I use a fork to prick holes evenly every 2 inches or so, or they can explode. Lay potatoes of similar sizes on the oven rack. Without a tray. Bake for an hour at 190 degrees celcius. Take potatoes out with a pot-mitt or thick cloth, squeese to make sure centre "gives." Cut potatoes open carefully, centre will be soft, skin crunchy. Ready to eat or stuff.

I must also suggest pan frying straight cut chips in olive oil (not boiling first). Deep frying is great. Must have from time to time. However pan fried in olive oil gives a creamy sweet centre with a medium crisp on the outside. Quite some effort, but well worth it. Extremely comforting.

a while ago i went on a picnic with a friend and i made potato-egg-mayo sandwich using the recipe from this video. i didn't have pickles, but everything else was the same, and it was _heavenly._ packed the sandwiches in an insulated ice bag and we ate them under the sun. the combination of mayo and mustard, the extra tang from the chopped shives, the balance of flavours thanks to the bit of sugar, and the heartiness of the mashed potatoes -- fantastic!
My family had an exchange student from Korea stay with us one year. We thought it was odd that she'd take potato salad and make sandwiches out of it, but didn't think much of it since egg salad is a typical sandwich filling and potato salad isn't too much different. I guess potato salad sandwiches are a regular thing in Korea? Never tried making it with ham or sugar in it, though. The soup you made to put on rice looked really good. Usually I'm not too much of a fan of soup, never liked the broth. Still, it's got all of my favorite ingredients in it (primarily lots of onion and peppers), and I don't think I'd mind soup that you use to top rice with rather than just have in a bowl full of broth. Kind of surprised that you'd put a potato-based soup on top of rice, though. I mean, I know rice is a major staple, but I didn't think that a starch on top of another starch would be a normal thing.

btw at 19:20 to make the souffle, don't stir the meringue. It will collapse and not be fluffy anymore. Instead, fold it gently until it is combined.

i recommend tacos dorados de papa (fried potato taco)
•boil your potatoes, mash them with salt and cheese.
using awarm tortilla add some potato puree and fry until golden brown.
•for filling you can use whatever you like! traditional style is usually shredded lettuce, tomato, onions, salsa, cheese and sour cream!
