I live in the Dandenongs the hills of Melbourne. I grow Yacon and never remove it and store the crown. It works even though we are in a temperate area. When it dies back, I divide the crown and replant and then in spring it all comes back. Sadly I didn't realise that they don't store like a sweet potato and left them in a basket on the bench. The were covered in mould within a 5 days and the smell. A waste of a about 4 kilos of tubers. Thanks for the tips of using the leaves.

I tried growing these this year in my garden in the United States, South Central Pennsylvania. That's in U.S. agricultural zone 6b. They got about knee high, and I only got a few very small tubers. They were good, but reminded me of a young mild carrot in flavor, with the crunchy watery texture described. They weren't as sweet as a carrot though. I'm going to try some leaves today, and I might dehydrate some for tea. I'll try to store the crown over winter for another try next spring. Interestingly, when I cut the stems I found them full of ants! It didn't really seem to ba affecting the plants though. I think that perhaps vine boreres got into the base and the ants took advantage of the space provided. It's a very pretty plant at least.

Well all your info. has been very useful, I have a small fig tree in my back yard and because I does not want to expose my self to covi 19 going to the market, well I started making scrambled eggs with fig leaves and you now what, is taste pretty good, also I have been using my pomegranate leaves to put in soups. Thanks for having this channel.
I just came across the existence of the yacon while researching cassava/yuca. The video was from Ireland. Being an American I am not good with accents, but I notice your first name certainly looks celtic and I looked it up and it is a common Scot Gaelic name. i will look for people in my region that is the northern coast of the gulf of mexico to see if anyone locally is growing it. But anyway will watch your video and I have already ordered a single yacon from planting justice. They seem to be west coast and really soaked for the shpping, but they had what I was looking for.

Peel it chilled it.... Yummy crystal crunchy and juicy. Fresh will be great unless you really need to cure it. It's a very fragile rhizome and easy rotting so handle with care. Planting from cutting is easy like planting sweet potatoes and tapioca plants. Love it Consume rhizome for diet and constipation. Leaf could boost insulin, consume or brew tea. Some places call it Insulin Plant best for diabetes. Pls consult doc before taking it.
One interesting thing about the "permaculture" plants is the deer will not eat them. They will eat scrubs to the ground but will not touch the "magic moringa tree".
@@MoragGambleOurPermacultureLife There were no deer here ever but they started moving in 10 plus years ago. Now you can't plant any "normal" vegetables. It is fairly depressing.
Use a seaweed/fish emulsion foliar feeding - deer tend to avoid a fish smell and over time it may keep them from coming around as much - just a thought and still a clean organic growing method.
I have Yacon it is a large plastic pot it doesnt get very big prob as in a pot and prob dont get as much roots off it. Oneday like to plant it out It is very unusal taste and the crunch is a suprise Wow didnt know the leaves where edible I am in Albury NSW so it stays in the pot and comes back the next year I got it out of Curiosity🤣😂🤣😊

We grow Yacon and after a good wash eat it with the skin on when cooked. Everyone seems to say peel them.

maybe even 9 months. After plant dies off.
My ya on don't taste sweet it taste like a radish. So I don't know if they need to stay in the ground I dug them out after first frost.
Once I've dug mine up, I let it sweeten in the sun for a week. Also I think perhaps that you might want to leave it longer in the ground

They definitely don't need full sun. At least in my climate in North Germany, a partially shady spot is fine (if not preferred)

The leaves are slightly bitter. So you need something sweet to hide the taste.
