Mergim go inside the CITI building (behind Avida Towers) there is an authentic Cantonese casual dining/take away place there called Lam's Kitchen. Chef Ben Lam used to be a head chef at Makati Shangri-la. There is also Subway Sandwiches in the same building if you want some healthy options.

I noticed in Metro Manila, coffee shops prefer the sour taste. Aside from Starbucks, it's really difficult in Metro Manila to find coffee that has a dark bitter taste which is my preference. In Cebu, I can easily find coffee shops with coffee to my liking, even coffee shops that are very local and not big franchises. BO's for example, a Cebu based coffee shop franchise has a very dark bitter taste for their coffee. I think, in general Cebuanos prefer their coffee to be dark and bitter while Manileños prefer the sour taste. That's just my observation and opinion. I could be wrong.
It's probably part of the global specialty coffee trend that's been becoming more and known in the last few years esp. during pandemic. It's been here in the last decade or so in local cafes of Makati, but more and more people being accustomed to knowing a variety of coffee flavors and their origin. Philippines still has its mainstay dark and bold flavors from Kapeng Barako (C. liberica) which was brought by the Spanish in the mid 1700s to Batangas. The supply only accounts for around 1 to 2 percent of the global coffee and is mostly sold to locals and tourists. When the tides of the trends change towards the traditional dark and bold flavors again, maybe the world will be reintroduced to liberica/barako coffee. But right now, the most expensive coffee by the pound is the Panama Gesha, which leans more on the fruitier side rather than the dark and bitter side.
Auro Chocolate is a Philippine Chocolate Company with at least 10 international awards for their top quality chocolates. I believe they have a cafe too in Dubai.

Many of those shops will be closing on the next few years when they realize that the economy of the people around there will not be able to support the expenses, but is defiantly lots of coffe around there, I think the best product come out from the Wild Flower, everything else is smoke in the air

There was actually a massive Arabica shop there in BGC before. But they closed it permanently and replaced with the new coffee shop called Angkan.

No doubt there's plenty coffee options in BGC. Couple more to add to your list, Pocofino and UCC coffee
They can adjust "some" of the sourness of the coffee. They are likely under extracting their espresso shot, which creates a sour taste. Nice vid 👍🏽👍🏽

Lighter roasts are more acidic. That makes the coffee sour. The darker the roast, the less acidic.
also he was getting a lot espresso shots, they are concentrated and will generally taste sour/acidic no matter what lol.
