amy, being Filipino Canadian I have a lot of respect for you. these days I lean more towards eating vegan but growing up having people yuck my family's traditional food, I grew up with some shame surrounding it so to see you being so adventurous, respectful, and educating others on Chinese culture & foods that are "weird" in western culture yet traditional to them, is very refreshing & warms my heart in a way. though I prefer not to eat animals myself, I have full support in your ventures & admire the way you go about it all! take care!
