Jules is using a Henkelman Mini Jumbo vacuum machine with a raised lid.
The Mini jumbo is much more affordable than the Aero 35 on his equipment list, so about half the price. 🙂
I wonder if we can do that vacuming step with a much cheaper device. Anybody??
1: Pour the liquid in the vacuum container of a Foodsaver or Solis vacuum sealer, connect the hose and suck the air out.
2. Buy a plastic container in your supermarket that supports a manual vacuum pump.

Why does your cutting board has a tray underneath?
The tray is used to make new space on the cutting board after cutting the products.
