    Hey Jules, glad you're doing better after the car accident. One thing I'm playing with is crema catalana... maybe you could do a play on that, or that classic flavor combination of lemon, orange and cinnamon... just throwing the idea out! :)

    Dude… :D I made your macarons and the brioche feuilletée, they were great, but this is way beyond me. Are you making these creations for your family, or these are experiments for a restaurant meal?
    Congrats btw, looks amazing, I’m sure it tastes incredible!
    (but this is the level of cuisine that I’d rather pay for than try to recreate :D )

    Jules is using a Henkelman Mini Jumbo vacuum machine with a raised lid.
    The Mini jumbo is much more affordable than the Aero 35 on his equipment list, so about half the price. 🙂
    I wonder if we can do that vacuming step with a much cheaper device. Anybody??

      1: Pour the liquid in the vacuum container of a Foodsaver or Solis vacuum sealer, connect the hose and suck the air out.
      2. Buy a plastic container in your supermarket that supports a manual vacuum pump.

    Why does your cutting board has a tray underneath?

      The tray is used to make new space on the cutting board after cutting the products.
