- I set up 5 different cameras all around my kitchen to see if I can make a Steak Dinner with 2 side dishes for 3 people in less than 31 minutes. Hopefully this is an interesting look into how I cook and move around the kitchen, compared to a Gordon Ramsay steak video.

I think this kind of format would really suit quick weeknight meals
any meal is fine. the steak could be subbed with fish or chicken. actually the beautiful thing about learning how to cook fundamentally is that you can just buy what's on sale and cook that.

Big takeaway not mentioned is you can move a lot faster when you're not following a recipe. It's really hard to move fast and fluid when you're constantly checking a recipe while cooking.

In my opinion memorizing and learning what the recipe is about make it much easier. You can quickly check at glance if you are not sure of something. Before I am starting to cook I read recipe 3-4 times to understand what I am doing and plan in head what is needed
It's also why I appreciate Ethan's videos that focus on method and frameworks. I don't have to worry about memorizing or following a specific recipe if I know the guidelines on how to put a bunch of different things together.
You can't even clean as you go if you are constantly checking a recipe. The more skill you gain, the faster and easier cooking becomes.

I've always appreciated that even in your "can I make it faster than" videos, you're relaxed, getting stuff out of the fridge, taking it easy... xo many vids show them panic cooking and doing a half-assed job...

Edit: I also appreciate Ethan's style here. In general, real-time kitchen flow is way better for teaching cooking skills imo
Kenji’s format is better than this one I feel. You can really see everything he’s doing, the POV allows for a more realistic look at cooking.

I think a mix between the two is good. The raw end to end of Kenji’s vids really helped me learn how to cook actually. The little things really helped me identify times where I’m messing too much or too little with certain parts of a dish. Also takes anxiety out of some of the process because there are some methods that are more easily demonstrated through actions than words or a cut of the end product. Even in this video it was helpful to show the last few minutes of cooking the steaks because it shows how often others are flipping versus leaving.
Midway through watching- I love this format for so many reasons. Very relaxing to watch, and this will be super helpful to follow along. Would definitely love to see more like this- maybe a brunch episode?

Relaxing? I was like - ahhh, the pasta is going to boil over!
The first half of the video was calmly-paced. But the second half where the urgency picked up was very relatable for me - trying to clean, do more prep, put dishes away, wondering what step is next, etc. are all things I do despite all the mis en place and initial prep. Not too many cooks show the little scatterbrain moments.
More videos like this would be great. It feels like getting this kind of "full look" at a meal cooking process could help a lot of people out.

I actually like the way you showed all the little "behind the scenes" details like the slightly tedious task of chopping the parsley and how it gets stuck on your fingers. Even though I'm a relatively experienced home cook, I sometimes wonder how other chefs deal with little issues not shown in the edited versions we are served on RUclips channels. Keeping it real is really appreciated.
I really appreciated that you started with an empty kitchen here. So many cooking/recipe videos start with all the ingredients prepped, and while I understand from a filming perspective, it can make it really hard to see just how long it will actually take to make it all and even make it seem much more manageable when the prep work truly takes a huge chunk of time. Love the new format!
I REALLY do enjoy the longer form content. Makes it a bit easier to conceptualize how long I could be taking to make everything come together, or in my case being able to adjust the time I would need to make it. Also, its an underrated skill being able to put together a dinner and have everything come out at the same time! Great Video!
29:57 I've found you can grip the steaks in your tongs, pull the tag at the end to tighten them, then set them on edge to render/char the fat and having the tongs as a resting/balance point means they'll never fall over. Not so helpful with 2 steaks and 1 set of tongs but something to bear in mind.
Just wanted to point out about the importance of washing and thoroughly drying your veggies before cooking and especially in raw applications which could have all been done before cutting them :) other than that, this is probably one of the best formats you have done as well as the blind taste tests for specific ingredients
I had a bad experience last year. I steamed green beans to have with pie and mash, I mustn’t have washed the beans correctly and half way thru my meal I spotted something moving on my plate…..I ran to the kitchen to investigate under a bright light, and there was a slug. I vomited and put the rest of my diner in the bin. It was a horrible experience I’ll never forget

This format feels great. It feels so relatable to watch you cook with all the good moments and the bad, and shows how to use your time to clean, organize, and other non-cooking tasks. I'd love to see this video as a livestream, with someone there with you asking you questions from the chat (why did you just rotate the steaks, etc) while you cook. I enjoyed this.

Really great format for a video. Time is my biggest hurdle in day to day cooking. Learning how to manage time in the kitchen is a skill I dont see talked about often.
I love how Ethan shows us how it actually is to cook under pressure, while cooking and preparing multiple dishes. This video answers so many questions I have when watching other youtubers cook.

For the steak, I highly recommend checking out the cold sear technique put out by America's Test Kitchen. Super quick, and little to no smoke produced; it's been an absolute game changer especially for apartment life.

I can’t tell you enough how I’ve been waiting on a video like this. I always have these small seemingly insignificant questions that keep bothering me and never get answered. Like is it okay to have multiple steaks in a pan at the same time, is it okay to cook lower and slower than just ripping hot searing, when do you start one thing and finish another. This format really helps answer those questions. Love it!

Great concept for a video. This is why Kenji Lopez-Alt is the GOAT of RUclips food videos because he does exactly as you’ve tried to portray here. No cuts, you can see him working from the fridge to the sink. Best is sometimes he messes stuff up but still serves it
I like this format. It feels more honest than most of the 15-20 min meals that are show on YT. This is the actual time it takes for a meal like that. I know some people just want to see the finished product, but me and probably many others that are trying to figure out life when there are limited time slots involved, really prefer this way.
I like to sip on scotch when I cook and take my time. Great way to spend 30 to 40 minutes. I like this format of video and I hope it blows up (which it might due to rote watch time), this is the real deal of cooking.
I would LOVE to see this type of video for complex meals like Thanksgiving dinner, Easter, Christmas, etc especially where volume is a variable.
You look so comfortable in the kitchen man. Like not that you are experienced, but that you are at a spa lounging around and playing video games.
I LOVED this. I was literally thinking about how many cooking youtubers I like seem to be doing mostly shorts lately and that I don't really enjoy them. I don't learn as much, they don't entertain me as much. This was wonderful to see start to finish and interesting to see how your actual workflow works beyond the edited down stuff we usually see. Thank you so much for sharing!
I like the format with the multi-cams and showing the normal work/steps that go into everyday cooking. You work much like I do, cleaning up as you go. Since you asked, here are a few thoughts: 1) If you moved the prep cam to a place directly across from the island, perhaps on the outside of the pantry, you could eliminate the prep table that blocks your access from the sink side of the island giving you better flow in your kitchen 2) Looks like you have a garbage disposal in your sink. You might include that, for those who don't, using a strainer in the sink will help eliminate costly plumbing repairs by stopping the food stuff you grind in your disposal 3) You really should wipe/clean the probe of the instant read thermometer before folding that dirty tip into the holding clip unless you clean the holding clip every time you use the thing - something not really recommended by Thermoworks. Looking forward to how you expand this format and future meals.
Would have been so easy to edit this and make yourself look like you did an absolute flawless job. I for one really appreciate the humbleness and honesty showing what most all of us go through cooking at home. And the meal looked amazing by the way! Well done.
Personally, I did not like the small comments written on the screen. I understand the concept of it, but I would more prefer a voiceover or something after the fact over text. This is simply a personal preference, so you keep doing what you do.

He could have done this in 30 minutes if he worked more efficiently. This kitchen is way too big and moving to that black table ate a lot of time. If he had done his chopping closer to the stove he would have been monitoring that pasta more effectively. I would have dropped the pasta, turned the broiler on, prepped the broccoli, made the chimichuri, dropped the steaks, pulled and finished the pasta, dropped the broccoli at which point the steak and broccoli would have been done cooking in much closer proximity to each other.
It's videos like this that's going to make this the #1 cooking channel on YT.
So quiet and simple, I remember those days. It would be fun to see a home cook do a video like this while wearing a baby and little kids playing at their feet.
I did enjoy this style of video and I think it's a great idea that would definitely be helpful to so many people.

To go further in the idea of showing everything, and keeping in mind that it's a steak dinner, I feel like it would be interesting to see how you actually serve it at the table for your guests. I know your videos aren't about hosting dinner parties but I believe sometimes it's part of the homecook job description. Great video concept btw.
I feel like the good thing about this type of video is that it's like sitting there in the kitchen with you. Think about how you learn to cook from your parents, grandparents or teacher: they don't just show you the highlights, you watch them doing everything in between as well and that's how you learn. "Highlight"-videos might be more visually pleasing and "artistic" (in loss of a better word) but these are the kinds of videos that actually teach you how to do cooking or whatever else they're trying to teach you.
I imagine that it's much easier for you to record as well (until the cameras die anyway, haha), since you don't have to keep stopping and starting to adjust the cameras as you go.
Love the planning of what to do when. With Thanksgiving coming up now, I'd love to see a set of what to do the night before, and what to do on the day of --for holiday cooking or cooking several unrelated items.

Loved the video! One thing I'd add to this style of video is fairly detailed timestamps so that if a month from now I come back to this video to remind myself of a specific technique you used or whatever then it's easy for me to navigate to that point.
Personally I love the long form unedited content. Helps shed light on all aspects and not just ingredients and technique
I am loving this format! It was very realistic setting a goal in mind but still going through all the steps like one would normally do for the home cooking setting. One of my gripes with timed challenge videos is usually when someone proclaims "it's easy and possible in XX minutes" meanwhile cutting out all the cleaning tasks and proceeding to rush through and cook in a very stressful way. I loved seeing you go through your kitchen doing different tasks in parallel while still trying to maintain a clean kitchen. This is definitely something I want to see more of, great job!
I think it’s great to show the chaos of the home kitchen during meals. Many of us have kids and may need to deviate our direction once or twice to make a meal that works for the whole family. I have a small kitchen and meal prep usually adds over a thousand steps to my day. I love this approach, it really helps people understand even for the more experienced cooks, things don’t always go as planned.
This is absolutely fantastic; love this format. Truly fascinating to see how someone else organises things in time / space in the kitchen.

This is a really cool concept. Like an on demand cooking class, that people who watch can go with you in real time and be able to hear as well as watch without pausing since we’d be chopping along with you. Awesome!

Well done. Really fun to watch. One thing I want to point out is that your kitchen is more spacious and uncluttered than what most of us have to work in. Also, I suspect it's hard not to talk the whole time, but the silent working interludes allow us to draw our own insights into the process. You're too young to remember, but there was a cooking series on KQED in the 1970s called "the Great Chefs". What made that series great, besides the chefs themselves, was a minimum of voice over narration, so you could focus all your attention on the chef's methods and ingredients. You should be able to find some of the Great Chefs episodes online and you might want to look at them for a little inspiration. Just a suggestion. Keep doing these, Ethan, they are very useful and entertaining.
A small tip i learned working in kitchens, if you put your pot of water over half the heat element, it will still boil but wont boil over.
This is great. Timing. A lot of cooking videos show the process but not the time and incidental things to put a whole meal together. I like this format, continue.
I really liked this format. It was like hanging at Ethan's place while he makes dinner. Whenever my family gathers at our mom's house I get to be Ethan, so it was nice to be a guest this time.
I’m a home cook in NYC, small kitchen, envious of your kitchen. After 50 years of home cooking I’m still not confident with steaks especially the pricey ones. The steaks you’re cooking look exactly like what are sitting in my fridge. I appreciate the trick cutting grape tomatoes with two deli container lids kind of genius. The butter baste at the end, perfect. With everyone of your videos I watch, I learn something new. Thanks. Vaya con dios!

And i have to say, the best video's come from Chef Jean-Pierre and Food Wishes (chef John)... But THIS takes it to a whole new level... The 2 deli lids technique to cut tomatoes (and other stuff!) in half has got me really excited to cook haha. So simple but I would have never thought to do something like that.
I dedicate an old anonodized aluminum pot to cook pasta. It's a very 'slippery' metal as opposed to stainless, which is a very 'sticky' metal. Even if you lose track of time, it helps prevent issues like we had here w/ the pasta. Thank you for the great work!

i really love this, especially when i was just getting started with cooking i always hated when youtube chefs would cut away near the end part of cutting a vegetable, because i always used to struggle with that, it might not make for the perfect camera shot but it has to be done and its nice to see how its done
I absolutely love this style of video! Everyone always says "oh, you can cook this in 20 minutes...." but I really doubt it. Show me what you're doing so I can see how fast you're going, how you're multi-tasking. This is extraordinarily helpful for a home cook!

I like the video style. In the future I don’t think you need to provide the commentary about why you’re doing it. It makes sense. I liked the written critiques about what happened while you were cooking. I think some time compression would be fine. But I do like the timer. I am personally obsessed with maximizing productivity in the kitchen, and appreciated how you showed when you prioritized. Cleaning as you go is huge and I liked the way you incorporated it.

Everything from 10 minute, easy weeknight meals, perhaps that you've come up with on the spot from ingredients you have on hand, to hour, hour and a half, much more involved meals.
I think it'd be incredibly helpful to demonstrate how the things you're thinking about change when going through that range of different cooking experiences.

And just on your talking points at the start, I think that's why when I first found Kenji a few years ago, it was so refreshing to see a perspective of home cooking that felt true to what it's like to be a home cook. Your videos with minimal cuts are always brilliant, and they're on frequent rotation for me when I need a little inspiration.

I really dig this. I would watch tons of these. I feel like seeing examples of not just recipes, but menu construction, and execution of several small, relatively simple dishes is much more analogous to how a lot of people will be cooking at home. Thumbs up.

Fantastic video! Another topic i would love to watch is seeing how to cook a meal for a crowd with 4 or 5 people in the kitchen. I go on vacation with a group of people with varying cooking skills. It is always interesting and a fun time and would love to see how you would tackle this environment

Wish I had countertops as big as yours. You should recommend that everyone get countertops as deep as possible. It gives more room than folks realize.
