    Our Zoom class this week was epic. We made ciabatta bread on our Baking Steel and answered all your questions....We baked at 425 F for about 20 minutes. But first we made our 24 hour dough ..
    Ingredients
    500 grams organic bread flour
    350 grams water (filtered)
    16 grams sea salt
    1 gram active dry yeast

    So you don’t ferment in the refrigerator for a couple of days?

    What do you do with the dough you siren's using? Can it be frozen or do you have to bake it all right away.

      Aren't using...not sirens...not sure how that got in there..sorry😂

      thank you. This dough can be frozen upto 30 days. Or you can take whats leftover and add it to next weeks batch of dough. Make sense?

    @AndrisLagsdinYT Have you tried a higher hydration level for this? Maybe 75 or 80%?

      that would work beautifully. Just a little more difficult to handle. But will create some beautiful air pockets

    what size is your dough container?

      It can hold 5L of product. I make a 1000 size batches often in mine. But for large batches and 8 dough balls you may want two containers....

      If you click "show more" under the video he has the recipe listed. It's simply a 70% hydration pizza dough recipe. I've made baguettes with that same dough. Works great!

    Maybe you can spend a little more time shaping the bread.
