If you wanna make it work on higher simulation distance make it 100 blocks away from any land and more than 64 blocks up (in short keep simulation distance low and I'll recomend still following this since making it a little higher will result in no mobs spawning in ocean or nearby land hence all drowned will spawn in farm)

You can save about 9 stacks of leaves if you do walls on the back of the stairs instead of a giant platform over top i tried and it works the same

I used cobblestone for the roof with slabs on top of that bc I didn’t feel like leaves. Will this still work?
Only at night because you need the leaf roof for it to work during day
