I made this yesterday after making the brown stew chicken and it was really good! I made it exactly but I’m not sure if my chicken is dry but I had to keep adding water. I never got the lots of gravy for whatever reason. I used thighs and legs bone in and with skin. It’s definitely gonna be in my dinner rotation but if I can figure out the gravy situation that would be great. I also want to thank you for sharing recipes because I have family and they didn’t pass down a single recipe to me. I asked my mom today about it and she said like you, they didn’t write down recipes but for my family they also want you to rely on them for the recipes. It’s a shame though because here I am 33 with no recipes to pass on except from people like you on the internet. Thank you!
Thank you for making it and letting me know how it turned out. For the gravy, the chicken may be the reason or it may be the pot. If the lid isn’t tight enough, you may be losing liquid due to the evaporation. I like Dutch ovens with tight lids for this. If you see steam rising out the sides, it’s likely not tight enough. And I feel you on the recipes lol. It’s one of the reasons I started to document mine, so my children would have a resource to look to to make their favorite meals. So happy I could help 😊
I stumbled upon this recipe, you made it look so easy, and I cant wait to try...not alot of ingredients and I see so many with scotch bonnet peppers but can't find here in Michigan..glad this one doesn't require them...thank you

Hi Stephanie, I haven’t made this in the pressure cooker because the pressure cooker needs more water, but the Foodi only requires 1/2 cup so I’d just increase the water amount to that and pressure cook for 10 minutes if using the boneless skinless thighs cut in half.
Making this tomorrow. I absolutely love Caribbean cuisine. Have tried many recipes and all of them turned out to be total disaster 😭. I hope following your recipe would be good ❤
I seasoned the chicken with 2 kinds of Jamaican curry powder, one that has salt as a second ingredient. Since curry powder is a blend of seasonings, it’s unnecessary to add additional salt and pepper during this stage. Ginger is a personal choice but I don’t care for it in my curry.
And she also used All Purpose which traditionally has salt, along with the curry blend which also has salt. I mean....do you know anything about cooking?

what happened to the thyme, ginger and garlic? Believe me, that one step of burning the curry changed my life! That is the key to delicious curry!
