    I always find Tiki history fascinating. Almost as if it were a dark art with all the mystery and secrecy behind it!

    Derek, great to see you showcase Jim Hurricane Hayward's work. The Atomic Grog is a GREAT tiki site. Nice to see a slimmed down 6oz variation on the Black Magic. But Jim, to slim down the spec you sacrificed the delicious touch of vanilla (via Don's Spices #2)? Mariano might forgive you, not sure I can :)

      I feel your pain ☺ ... I always keep a bottle of Don's Spices #2 at hand, but I tried to make this version simple for folks who like things streamlined. Whoever they may be 😏

    I’m very happy to see you deliver your take on the “Black Magic” cocktail. I’ve been on the “Tiki” train for about 3 years now and when I discovered this cocktail, via the Atomic Grog. The Black Magic quickly rocketed to the top section of my all time favourites. I will say though that I also use Don’s Mix #2 that has vanilla in it. As an earlier commenter stated it’s a real nice addition. To me, Somehow all the ingredients combined taste of caramel fruitiness…….. magnificently delightful !!!
    As per usual I am enjoying your videos very much…..thank you for taking the time to research and produce them….cheers 🍹

    If anyone wants to really dive into Mai Kai history, check out Tim "Swanky" Glazner's book, "Mai Kai, History & Mystery". So much great info about the legendary Tiki palace.
    Great video. Thanks for featuring the Atomic Grog!

    Maybe call the simplified version "The Carlos Santana" :)?
    Going to try this after September to get full effect... so I'll be back.

    Tip: if you're on a budget, get yourself a "Gold Blended Rum" - a mixture of Column-still (Don Q) and Pot-still (Smith&Cross). My go-to blend is Plantation Original Dark - a mix of Barbados (column) and Jamaican (pot ) rums. Despite the name it's more of a gold rum than a dark rum so nicely fits the profile of this recipe.
    El Dorado 12 is a separate category called Demerara rum that isn't normally blended with other rums, made from just one distillary (that means no substitutes), and costs >$50/750ml, so go for it only if the budget allows. The addition of flavor won't be as prominent as the other two styles, more of a cherry on top.

      hey mate just fyi Plantation Original Dark is according to Plantation "A blend of rums from West Indies Rum Distillery in Barbados and Long Pond and Clarendon Distilleries in Jamaica." which are both English style rums.

      Most Demerara rums *are* blended rums - blends of pot and column distillates from a single distillery (Demerara Distillers). El Dorado 12 is made this way. Demerara rums have their own distinct flavor, though they are quite different from funky pot still Jamaican ones. This all being said, Plantation Original Dark won't taste like a blend of Smith & Cross, El Dorado 12, and Don Q Gold. If you want to be more friendly on your budget, keep the cheap Don Q Gold and, instead of Smith & Cross + El Dorado 12, use a black (i.e. heavy on the added caramel) Jamaican rum like Hamilton Pot Still Black, Coruba, Worthy Park 109, or Myers's, which are found typically for less than $25.

      @@hakupaku42 Those are good suggestions. The latest and greatest blend that duplicates The Mai-Kai's dark Jamaican rum is 1 part Wray & Nephew White Overproof, 1 part Appleton Signature, 4 parts Coruba. None of these are expensive, but it's a complicated blend so I recommended the ED12-S&C sub for its simplicity for this cocktail.

      Mariano’s Mix #7 is a Mai-Kai secret, but I think this comes close ...
      * 1/4 teaspoon of Herbsaint
      * 1 tablespoon falernum

    so should I just brew some coffee and add ice? throw it in the fridge? or should I do a cold brew?

    • @makeanddrink
      @makeanddrink  Год назад +4

      I’d just brew and chill 3/4 oz separately. Should chill down pretty quickly. Concentrates might be too robust!

      I concur with Derek. Garret Richard makes a Black Magic tribute with a cold-brewed concentrate, but he's pretty much a wizard so he can do anything. The Mai-Kai serves so many Black Magics, they just brew big pots of coffee and chill it.
