It's interesting how different harira recipes are. Our family would saute finely chopped onion and celery first in olive oil, with optional small cubes of beef or lamb, also adding ginger, tumeric, pepper and a little cinnamon, then parsley and cilantro, lentils and water, and simmer that for a few minutes before adding blended tomatoes which you push through a sieve to remove seeds and skin, and tomato paste mixed with water. The rule is with each additional ingredient we add a bit more water. That is all simmered until the lentils are pretty much cooked, then a small amount of rice is added. Once that is soft you can add optional cooked chickpeas and broken vermicelli. We also like to add lemon juice to brighten it up. It's my favourite Ramadan iftar and can be eaten for suhoor too. In Morocco it's served with chebekkiya on the side.
