Summer Fragrances… SOFT LEMON CAKE: easy, quick, and irresistible!

  • Hello everyone and welcome to my channel! Today we will make together a delicious Soft Lemon Cake, a simple and genuine dessert that will win everyone over with its fresh taste and soft texture.

    ✅ Ingredients
    200 g of sugar
    250 g of cake flour
    50 g of potato starch
    6 fresh eggs at room temperature
    Zest of one lemon
    A pinch of salt
    Half a glass of peanut oil (100 ml)
    One glass of milk (200 ml)
    16 g of baking powder
    Vanilla extract
    Powdered sugar
    ✅ Preparation:
    1. Extract lemon zest using a zester.
    2. Break the eggs (fresh and at room temperature) into a large bowl and start whisking them with a mixer at medium speed.
    3. Gradually add the sugar to the eggs while continuing to whisk. Slightly increase the speed once all the sugar is incorporated, and work the mixture for at least 7-8 minutes.
    4. Continue whisking the egg and sugar mixture until it becomes fluffy and frothy.
    5. Stop the mixer and add a teaspoon of vanilla extract.
    6. Whisk at low speed and gradually add the milk, then increase the speed again.
    7. At low speed, gradually pour in the peanut oil and then increase the speed.
    8. Add the lemon zest and a pinch of salt.
    9. In a separate bowl, combine the flour, potato starch, and baking powder.
    10. Sift a portion directly into the bowl with the eggs and whisk at low speed for about two minutes.
    11. Repeat until all the dry ingredients are incorporated.
    12. Preheat the oven to 180°C (static). Line a cake pan with parchment paper, or grease and flour it.
    13. Pour the creamy mixture into the prepared cake pan.
    14. Bake in the preheated static oven at 180°C for 45 minutes (baking time may vary depending on the oven).
    15. Remove the cake from the oven, sprinkle with powdered sugar, let it cool completely, and serve.
    16. Enjoy your cake!!!
    ✅ Tips:
    Eggs should always be fresh and at room temperature. Take them out of the fridge at least 30 minutes in advance if needed.
    To check if the cake is done, after 40 minutes you can use a wooden stick; if the cake is properly baked, it should come out perfectly dry.
    Parchment paper or the process of greasing and flouring the pan will help the cake release more easily from the pan.
