I need to look up a great recipe for kimchi. It’s one thing I’ve never made but I feel like marinating some thin sliced beef and doing marinated beef with onions and kimchi and rice. So good. I live near H Mart and they have delicious kimbap. Particularly the fish cake kimbap. Now I’m hungry!

its not that spicy but when you keep eating a lot then it starts to get spicier. the marinated crab is also the same. you should have something cold to drink or milk if you cant handle the spice
it really just depends on the spiciness of the chili pepper flakes that is used. i would recommend trying the Jongga brand. i think it’s one of the best store bought kimchi and it’s not too spicy. it’s more on the light and refreshing side. homemade kimchi tends to be more spicy in my experience as it’s less sweet.
Won't they explode once you open the airtight containers? Or at least for the smaller clear container one. The big one has a lot of space above despite getting squished inside by an inner lid.

What is the difference between leaving it out for 30 minutes or on other videos that say to leave it out for a couple of days? Is it just a preference thing?
Those are different steps. Freshly salted and left out for 30 min is to draw some water out of the kimchi before adding the paste so you have to use less paste. You leave the kimchi out for a few days after adding the paste to allow it to ferment.
