Hi Suzy, quick tip on pilau you need to get those onions brown and brown your meat before boiling it. I personally find the Sunset pilau masala to have a better flavour. Hope my tips help you in future no need for gravy browning

For the pilau, I still buy the whole spices and then I grind them myself. It gives off such a strong flavour that you only need to use much less than the store bought ground spice.

You should try it Julia. It's so life-changing. And I love your idea of making your own pilau masala. I think the problem was that I used to put them in whole, not ground. 🙈🙈

Also try heating the whole mix in a pan or sufuria first for afew minutes as you stir frequently then grind.

The fish should be coated with flour and fish seasoning before frying ..
Have you tried lentil bolognese? NYT has a recipe. Lentils added to your mine meat can change the texture a bit but will stretch your meat too.
Oh wow! I'd love this one. I'll try it out next. The kids seem to not be enjoying the sweet potatoes in the lentil stew this time round. I don't know what changed. 😅😅

I feel you Carol! It can get challenging sometimes but with a few hacks it is very manageable. I'll share a few tips of how I do it one of these days. 🤗🤗
Hello Queen I heard you mention that you could not find onion powder if you take a really pungent white onion sliced thinly dry it then put it on a baking sheet and put it in the oven at the lowest level or you can put it in a dehydrator leave it in the oven for up to 10 hours depending on your oven setting and then blend it up and there's your onion powder
Suzy the fish was wet when you fried it,try sprinkling it wiz lil salt then air dry ,it should not be wet when you come to fry it,or either still frozen,put them on a tray to air dry for like 30 mins to 40 mins, trust me it will work

Just a tip, The natural brown color of the pilau is achieved by browning the onions... I have noticed you just sweat your onions. With this method, you don't need to add anything for the color but be careful not to unguza the onions. Also wanted to ask....
How do you store your vegetables n salads without them losing their crunch and becoming rubbery or drab?
Thanks for the tips Ednah! I'll do that next time! For the salads, I keep them without dressing in the fridge, and add dressing on the day we are eating. Also, I don't add lettuce until we are ready to eat. I've done a video on how to store vegetables. Please check it out. It has great tips for storing all other vegetables.
Beef tallow is one of the heathiest cooking oil to use. Yellow mood in the kitchen, yummy!

it a frying pan cook in a lower heat and baste the fish in oil. its sticking to the pan
for such it means the fish was not fresh , dust a little bit of flour on the fish it helps to keep it intact and crispy

You should have sprinkle some flour to the oil before frying to prevent it from sticking to the buttom of the pan and breaking

Before you deep fry, make sure the fish has dripped water completely. Put salt in the pan too. The fish gets sticky because it's wet.

Suzy sorry for the fish possible reasons why your fish is breaking are
1.The oil is not hot enough
2. The fish is not dry enough
3. It may not be very fresh
4.You may have turned it too fast before crisping up well....pole
Also try dusting tge fish with a little wheat flour before deepfrying so that it doesn't stick especially when its not so dry.....then again doing it on a jiko does majic.....but its edible just make a nice coconut sauce and enjoy......🥰

My goodness, cooking all that food the day before travel is amazing. Please what size was the pot used for the pillau? Agree always brown the meat first for all dishes separately. Seems the fish might have been in the heat too long before purchase (not stored properly) or not too fresh. Safe travels.

For the fish to cook well, you have to let the oil heat up for some time. to be super hot . that is why the fish fell apart. My mom corrected me way back

I leave it to cool on the counter for no more than four hours..I realised it cools faster when it's divided into freezer containers, than when it's in the big pots.

We don't use palm oil dear. 🙈🙈 I personally find it a bit too strong. But when I come to West Africa I thoroughly enjoy the food cooked with it, especially Jollof Rice. 😋😋😋
It's not popular in Kenya, you can hardly find it in the stores. We commonly use vegetable oil.

Hey girl! It freezes very well! To reheat I just put it on very low heat with a little bit of water. As the water boils, the steam goes through it and heats it up nicely. Then I mash it again and it's good as new. 😋😋

Absolutely!! But you might need a deep freezer, not the fridge one, because of the frequent power cuts. In a deep freezer the food will stay more than 48hours without power. 🤗🤗

My dear Suzie. Pilau color is purely purely from onions. First of all, for all that pilau you needed about 15 big onions - the more the merrier, 2nd, the onions have to brown to just almost burning BUT should not burn ( because it will be bitter)
