He’s actually right about helicopters. To explain it super simply, you don’t change the rpm of the rotor blades you change the pitch of the blades itself. So a blade that’s perpendicular to the ground will make you go up but a blade that’s at 45 degree will make you go forward and up. There’s a lot more to it and that was just an example but that’s the easiest way to understand it. The C130 actually controls its speed just like helicopter blades along with the P3 and a bunch of other bigger aircraft with turboprops.
You don't strictly have to use variable pitch rotors on helicopters. It's just a big propeller. In practice almost all of them do (it's much safer and easier to control), but it's not required by physics. Also, lots of small, piston aircraft have variable-pitch propellers, not just large aircraft. There are two pitch angles in question. The "collective" pitch angle changes the angle of all the blades equally (collectively). This increases thrust with a higher angle (and drag, so you also have to increase throttle to maintain RPM), or decreases thrust with a lower angle. This only affects the vertical axis of the rotor. Nicer helicopters control the throttle and collective pitch with a single control, and you can basically think of the collective lever as your throttle. (Note: a -blade- perpendicular to the ground won't make you go up; there has to be some pitch angle to generate lift. A -rotor- perpendicular to the ground will make you go up, provided there's enough total lift.) The "cyclic" pitch changes the angle in cycles, so it lowers each rotor blade's pitch on one side and raises it on the other side. This causes the entire rotor to tip towards the direction with the lower pitch, so your "vertical" thrust is now (partially) pointing in the direction with the higher pitch, causing the helicopter to head towards the low-pitch side. You could also achieve this by just moving the entire rotor mechanism directly, but I'm not sure that's ever done except on an RC aircraft. The cyclic lever then controls which horizontal direction the helicopter is moving. There's also the tail rotor on most helicopters. Because the main rotor is spinning, the body of the helicopter will try to spin the opposite direction (Newton's third law in angular form). So the tail rotor pushes the body in the opposite direction to keep you from just spinning in circles. By changing the speed or pitch of that rotor (which, again, is just a propeller) you can adjust the angular speed of the body, letting you turn the nose of the helicopter left or right. It's adjusted by "anti-torque" pedals on the floor, which are basically just rudder pedals. They're not really anti-torque pedals (they don't stop the torque by themselves); they just adjust the anti-torque device (the tail rotor) in a mildly clever way to change yaw, hence the name. Tandem rotors, like the Chinook, turn by changing the speed of one rotor or the other, so the net torque spins the body.
