the aroma of jaggery/ raw sugar can be sensed kilometers from where it is prepared,.....this is the healthiest sugar in the world,......this has lot of minerals, hence the color,.....this is raw sugar,........... jaggery,...sugar is bleached jaggery,.... you will not get diabetes/ cancer if you eat this,...this is cottage industry,.... whole of India eats/enjoys this,.... this is just like making raw salt from sea water,..... heating at high temperature to evaporate moisture,.... it is in high demand,..... almost 3-4 times costlier than sugar,........

This is not traditional jaggery making. Traditional andhra style jaggery is made into flat slabs, and they are much darker in color because they won't use that white powder for solidifying. Instead they boil it much further to make it hard

Cane juice is not colourless It is Whitish yellow which turns a dark yellow when standing for 1 or 2 min. The colour change occurs when it comes in contact with air. This is called Gur / Gud locally and is molasses sugar . This is high in iron content possibly due to heating in a iron vat and has good digestive property. Process looks dirty though.
