Inssadong is an area in Seoul, there is much night life and entertainment there. Sul is alcohol and adding the 찌 at the end is just a fun or cute way to say "a drinker" so it's basically "A drinker in Inssadong"

It didnt come out of no where. The number of drinking shows was less because in 2nd and 3rd gen there were few groups. Now the 4th gen has so many groups and they are starting to come of age you can see drinking shows increase because there are MORE groups and more idols to guest on them. 90% of the 4th gen idols can legally drink now.
It's probably like tv shows where the higher ups look at the show and they decide if it's worth the cost or not to keep it going, especially if they have to make budget cuts and said show is not meeting a certain target. In other cases, it might have been a limited thing or maybe there was some behind-the-scenes things that caused the show to end. I have a feeling with Jessi, the show producers probably wanted her out because she was prone for not following the script, even though people loved it.

RUclips shows need sponsors. If they can't find new sponsors the shows end. Idols get hot and get better offers (YT shows don't pay much) Eunbi is doing a radio show that pays more and she has to prepare new music. Youngi's antics get repetitive and tiring after a while and New sponsors are needed. There are other drinking shows with hosts that don't make it about themselves and focus on the guests and how they come out in the show. When you make a show that is all about goofiness you can only have guests you are acquainted with since they will know what to expect. If a guest is unknown to the host, some of those antics may not be comfortable. So that limits the number of guests and shows that can be done.
kstar next door season 3 and 4 are there. i think they are just on different channels now.
