That was the plan! Keep the flavours the same, add some texture (chocolate crumb) and then completely mess with everything else! I have substituted mascarpone for the swiss meringue but you still get the richness and creaminess that you look for in the dessert.

The ISI whips are good but a lot of people are making them that work just as well for a quarter of the price (like the one i put a link for in the description). The thing that will get you is the canisters, they are not cheap.

The canister that you need for the siphon are N2O, this is nitrous oxide.

What can I use instead of coffee caviar?
And still get a similar effect? You could cook or soak some tapioca/sago/cassava pearls in strong coffee or whatever flavour you are going for.
