- Today on Booze On The Rocks I show you How I Acid Adjust a Watermelon Margarita. This is much simpler then it sounds, in fact Dave Arnold has a basic recipe for this in his book Liquid Intelligence. This is one of those Mezcal cocktail recipes that tastes go good you'll want more than one. Let us know what you think.

STRAWBERRY SOUR (Original Recipe)
2 oz//60 ml Mezcal
.75 oz/22.5 ml Orange liqueur
.55 oz/22.5 ml Adj. Watermelon Juice***
1 Bsp/5 ml agave Syrup
Method
1. Add all cocktails to the shhaker tin.
2. Shake with ice for 15 seconds.
3. Fine Strain into a rocks glass rimmed with over fresh ice.

Adj. Watermelon Juice
The basic recipe follows thhis pattern. For every 100 ml of fluid add 4% Citric Acid and 2% Malic Acid.

400 ml Watermelon Juice
@4% = 16 g Citric Acid
@2% = 8 g Malic Acid

My goal is to shake with a glass like you did. Do you not have to use the topper that comes with a shaker kit? It’s always dribbling and leaking when we try it out. Maybe we should have been using a glass this whole time? Great looking drink Dave.
It's mostly practice, as it gets colder i seals better. But you have to get the components seated right. The pint glass that I use takes a bit more to get the seal started, so give it 10 seconds then start to shake.

I use a juicer machine and it separates the pulp for you 😁
That is a good idea
I also make jalapeno syrup juicing jalapenos...just like making simple syrup I use the jalapeno juice equal parts sugar...no heating just lots of stirring... have a great night buddy!

Love your videos. I just started making your drinks at home for me and my husband and honestly can't choose which to make. Looks great, what is the purpose of adding acids to the watermelon?
Good question Ed. In this case the acids are a substitute for Lime Juice. This is based on Dave Arnold's recipe for Lime Acid. So adding the acids to the existing watermelon juice give you a watermelon/lime combination that would be the equivalent of add the same amount of lime juice. So if you don't have limes but have the acids you can make an equivalent.
You can use this method in a variety of uses including classifying cocktails. although I do prefer fresh lime juice.
Looks great but I never commit to a watermelon 🍉 cocktail. I eat it too fast 😂

I would consider going with 1 oz of mezcal and 1 oz of tequila. I love mezcal but too much dominates me.
