@@sharonfitzpatrick1621 I dont whip it but I do gently stir it with a wooden spoon so it not as solid to work with. The colour will get a bit lighter when you've mixed it again but once it's on the cake and has sat for a bit the colour will then darken again xx

Thank you - I came across this, looking to see if there were any tips for dark colours - here you are ! I achieved the correct dark green colour I needed without putting tons of colouring in and the buttercream going darker by itself after a few hours. I left my cake for a while & the colour stayed the same as I put it on - marvellous. I have been decorating cakes for a long time - never too old to learn & another new skills acquired - thank you once again for sharing ♥

I just tried this technique with my black American buttercream and it did work! But I think I may have made a mistake because I use half butter and half vegetable shortening for my recipe. I noticed after I put my buttercream in the fridge to firm up, the shortening separated from the rest of the mixture. Do you happen to know if I can just rewhip everything together or do I need to make a new batch?

No I don’t think it’s going to work with whipped cream frosting. But will work with any other butter based icing.
Hello, great video. I was reading through the comments and saw that you replied to someone saying that it can be chilled in the fridge for up to 4hrs. Do I whip it as soon as I take it out of the fridge or am I supposed to let it get to room temp and then whip it in my stand mixer? Thank you.
Hello Arlene, thank you for your question.
If it’s too hard when you take it out of the fridge, perhaps waiting before mixing might be a good idea. Also, you don’t have to use a stand mixer, a spatula would do just fine and if you must, don’t whip it for too long as it might start to look pale again.
On another note, leaving it in the fridge for 4hrs may not be necessary as long as the buttercream’s cooled down enough to be used.

After being microwaved a bit it’s quite runny. It is a great bold color but what do I do now? Do I put in fridge to firm or let it go back to room temp first, stir and then refrigerate??? Thank you for your great tutorial and that blue is gorgeous as is your finished cake!!!

Yes, mix the runny buttercream to blend it together then put in the fridge till it firms up, then give it another quick final mix before using.

I just did this and I'm scared to microwave it "too much" as once I did that trying to get red and I'm pretty sure sugar crystals formed that made the buttercream have little chunks. UGH. On your last heating in the video, it kind of looked like that but then it was smooth! So anyway, I stopped when mine was still kinda dark greyish blue and put it in the fridge. I'm assuming I can check it tomorrow and microwave more if I need to continue darkening? I don't need this before Thursday when I stack the cake.

Hi Anthonia. Yes, the buttercream will go back to normal after leaving it to cool for some hours. You don't need to leave it for 1 -2 days, you can leave it for up to 4 hrs in the fridge depending on the quantity, just until it's nice and firm (not runny). Then, give it a final mix with a mixer.

Can you do the same thing with swiss meringue or Italian or any other buttercream using egg in it?
I’ve read from some people that it works but haven’t personally tried it. You can just test a little bit of buttercream to check, but I’m almost certain it does.

As for Swiss meringue, many people have tried it and confirmed that it worked but I haven’t tried it yet.
Perhaps, you may want to try a little sample to see how it turns out.

Do you make blue icing, then just take out a little and microwave it then add it to the rest of the icing, or do you make the whole amount that you need

I haven’t tried it with Swiss meringue buttercream but I’ve heard someone mentioned to me that they did and it worked. I’ll advice you to try just a little to test just to be on the safe side.

Hi David, I don’t think it will work with whipped cream frosting but it does work with Swiss meringue buttercream or any butter based icing.
I always advised to do a small quick test before trying it out on the whole batch.

Hi Rashmi Sharma, I try not to use coloured buttercream throughout the cake when decorating, I only use a thin layer of coloured buttercream just enough to cover the surface and to avoid eating too much of dark coloured buttercream.
So I can’t really say as I personally don’t like eating coloured buttercream on cakes. Thank you 😊
Will this method work on cream cheese buttercream ?
Hello. I’m not 100% sure. If it’s more of a buttercream than cream cheese, it should work. I would say to experiment with a little batch of it to be sure. 💗

Hi @Julienne Formeloza. I’m guessing this buttercream should be fine in a very hot weather condition as long as it’s not left in the heat for a very long time. It’s a basic American buttercream (ABC) that I’ve used here and I’ve found it to be quite stable especially when you use the 2:1 recipe (I.e, 500g icing sugar to 250 grams butter).

i don’t have microwave, can i use oven instead?
I can’t advice using oven as you might accidentally burn it or something. How about you use a double boiler method.
Simply put some water in a pot/saucepan and place on a hob or cooker, put your buttercream in a heat resistant bowl and place on the saucepan till it melts a bit. You can experiment with a little and see how it goes. All the buttercream need is the heat to develop the colour.

My go-to basic recipe is usually as you’ve mentioned, 250 butter and 500g sugar with a spoon or two of milk or cream.
But most times I don’t follow that exact measurements because I add other things like melted marshmallows or white chocolate to it, I then reduce the icing sugar a bit.
