As the name suggests they help with exhaust gas scavenging from the engine as 2 strokes have not valves to open/close. Simply put, they are designed in such a way that they help move exhaust gases quickly and restrict intake charge from escaping unburnt too. Based of the principal of Venturi effect.
I rode a 250cc 2 stroke Yamaha R1-Z once and it was absolutely different from all 4 stroke bikes I've rode, I like it a lot. I really want to try a 500cc 2 stroke, with all the modern technology on it.
Road a 77 Yamaha RD400 then an 82 Yamaha RZ350 which I should have kept forever then to an 84 Yamaha RZ500 and replaced it with an 85 Suzuki RG500 which I should have kept as well. It's the light weight and the fun of having to keep them in the high revs that's fun for me. Oh and there's the whole out running the reaper on a 4 stroke thumper part too. Self preservation won out, just motocross now. Hope you find one. Peace.
Definitely need their own race series these bikes! Akin to the old boxer cup series…would be awesome to see the late 90’s/early 00’s guys slog it out on track!!!

(I'm not sure about the last part so feel free to correct me if you know better. Besides this my comment sums the the reason for existence of this bike up)

Beautiful bike. $135,000 is a bunch. Does that include a spares kit? No 2 stroke I’ve ever owned started that easy,must have something to do with the EFI.
Thought it is 125cc per cylinder, no? Cause the bike is 500cc in total. 🤔 And still, the bike produces 49hp per cylinder which to me is a lot for a 500cc bike. 😳

I saw a Suter 500 at 2019 Isle of Man TT....sounded awesome at max revs down Sulby straight mixing it with 1000cc superbikes.

I thought the weak points of 2T were fuel consumption, sound emissions (intake, mostly), and tailpipe emissions. Rings = easy to change.
