    I'm doing the same thing Nili, testing carbs. Seeing what I can get away with. So far, I discovered weight gain that I can shed quickly by limiting the carbs, and eating healthy unprocessed carbs seems to be ok. But my diet must at least be meat based or I'll suffer muscle and nerve issues. So I won't be testing pasta bcuz I consider that to be processed food. Also, my stool is still odorless like it was on carnivore.

      I wish these carnivore cos players would just admit they want some carbs and quit the dietary "testing" for educational purposes

      @@tb3287 Hahaha. 😆 Yes, that does show that I want some carbs, and quite frankly, I always did. But almost dropping dead on carbs forced me to go carnivore for a couple of years to save my life. I was a mess. Could barely walk and in need of a walker or at least a cane, and severe arthritis and other awful conditions.
      Those conditions went into remission and I am walking normally with speed again, but will come back without staying meat-based. Testing with carbs is necessary if you know that carbs is causing you problems, your diet is carnivore, meat based, or keto, and you still want some carbs.

    Awhile ago, I heard that cooking white rice and then refrigerating it for 24 hours makes it a 'resistant' starch that won't spike ones glucose level. Might this be something you'd try testing yourself? If you would, would you also prepare an easy family crockpot recipe of simmering chicken parts in cream of mushroom soup to serve with the rice. Many decades ago my mother made this & it became a family favorite. I made it for my family as well. It's a simple comfort food. Oh, I did add an extra can of mushroom stems & pieces. If available & if life allows, lightly brown the chicken in butter, oil & 1/4th cup of dry sherry before adding to the crockpot. The alcohol burns off during cooking & leaves a wonderful flavor. Thanks for considering this!

      Hey ~ quick question... have you tried making Keto Cream of Mushroom Soup? It's easy using simple ingredients you probably have already... except for the fresh mushrooms. (I use fresh & canned in mine.) 🙋

    Well, it does mine… even trying it as a resistant starch (i love potatoes but well, it’s been a no go for me.)

      Carb conversion used to work for me with potatoes. Not any more. Last time I had anything potato, my glucose soared over 180 (also eaten with complex carbs, so should have been buffered) within an hour. It took 3+ hours to come back down.

      Do you eat a lot of saturated fat? I had HUGE glucose spikes and very high fasting until I cut way down on meat and other sources of saturated fat and started eating mostly plant-based. Now I rarely ever get spikes and my fasting is 70-90. Down from fastng of 170-270.

      @@tarabooartarmy3654 For me, I don't have a lot of saturated fats, but I don't do well with a plant-based diet. I tried that a couple of years ago, and my blood protein completely tanked. I faithfully followed the meal plan given to me by my doctor. Honestly, I had a difficult time eating enough to cover the protein requirements. I don't really eat a lot at once, most of the time. I went to low carb veg and animal protein (lean), and the only deficiency I have now is sodium.

      @@karynstouffer3562 there is more protein in a lot of plants than there is in meat. I guess it just depends on which vegetables you prefer to eat. I enjoy beans, greens and whole grains, which all have high protein. Some vegetables don’t have as much. If your diet is working for you that’s great. I tried keto and lost over 100 pounds but I was sick all the time. It wasn’t keto flu because it never went away the whole time. Personally I feel much better when I eat less meat.

      @@tarabooartarmy3654 Yes, I know. I gave it my best shot. Evidently, my body does not process plant proteins properly. That's not the only thing my body doesn't handle very well. I ate everything, in the proscribed amounts, that was on the plan. Except for the beets. He forgot that I'm allergic to them. 😂

    Would love to know how you & Dr. Boz have such low fasting BS. Although a senior T2D, taking Jardiance and Metformin exercising and eating a very low carb diet my BS rarely dips below 100. Food spikes are much higher than yours as well. A1C low 6's so not so bad. I'll never get below 6.

      check out Marty Kendall's program called Optimizing Nutrition and Data Driven Fasting where you learn to HOW to bring down your fasting blood glucose over a few weeks You'll need a BG meter but doesn't have to be a CGM Marty's data is amazing especially if you're a numbers guy who likes spreadsheets and it's from 70,000 or more people It's worked for me and my bestie and most of her family I'm in the 70s now and A1C was 5,1 from 6,5 and then 4,9 in April

      Its because of the saturated fat. When you eat low carb, you worsen insulin resistance because the saturated fat accumulates in your muscle cells (where it doesn’t belong) and blocks insulin receptors from pulling glucose into the cells and out of the bloodstream. It is called intramyocellular lipids. I got to 5.5 A1C eating plant based and very low saturated fat. A baked potato used to spike me to 200+ and I’d still be 160-170 2-3 hours later. Now I can eat a potato and I get to around 140 and get back down around 100 within 2 hours. My fasting was 170-270 on keto. It’s now 75-90.
