Homemade no-knead and gluten-free Easter cake!

  • Easy recipe for homemade kozunak, soft and delicious gluten-free. You can prepare this recipe without sugar and lactose. Kozunaka is not kneaded, there are no threads in it, but in taste it is in no way inferior to the classic Easter kozunaka.
    Ingredients:
    500 g gluten-free flour mix (I use Lidl's)
    3 eggs (1 egg white is separated for spreading)
    130 g of sugar (you can replace with 130 g of erythritol or stevia equal to this amount)
    150 ml of milk (for the lactose-free version, nut milk or soy milk)
    1 packet of dry yeast
    60 ml of oil
    50 g of butter (for a lactose-free version, replace it with oil and vegan butter, maybe unflavored coconut)
    1 tsp vanilla
    zest of 1/2 lemon and orange
    for filling raisins and orange peels
    almonds for sprinkling, if desired
    The yeast is well activated, the dough rises once for 60-90 minutes, the filling is placed and shaped, it is left to rise again for 30 minutes. Brush with egg white and sprinkle with almonds and sugar. Bake for 20 minutes at 160 degrees and 20 minutes at 170 degrees.
