Never saw a bicycle with cantilever brakes at the bottom of the rear wheel before. Was there an advantage? Bike is good for another 30 years after this work.
U-brakes were common on mountainbikes in the 80s. Specialized also used them up until the '88 model year. There are functional advantages to them being mounted on the chain stays, but also drawbacks. Like being in the mud splash zone... 😅

Not sure what you mean. I applied rust converter to the exposed metal on the seat stays, so they turned black. Is that it?
