Ingredients:
4 large Russet potatoes
Oil for frying
Salt and pepper for seasoning
Cold water
Ketchup
Mayonnaise
Directions:
1. Peel the potatoes, then, cut each potato lengthwise into 4 or 5 pieces, then cut each piece into sticks. Each stick should be about 1cm (1/2-inch) thick.
2. Rinse potatoes under cold water, then place potatoes in a large bowl and cover with water. Let soak for 30 minutes.
3. Pat dry with a clean kitchen towel.
4. Heat oil in a deep-fryer or large saucepan to 275-300F (135-150C).
5. Gently add the potatoes to the oil, in batches, and fry for about 3-5 minutes, until soft, but not golden, stirring and flipping the potatoes occasionally. Remove from oil and drain on a paper towel. Let cool.
6. At this stage you can freeze the potatoes and keep them until ready for use.
7. Heat oil to 400F (200C). Fry the potatoes again, in batches, until golden brown, about 7-8 minutes.
8. Remove from oil, transfer to a paper towel to drain. Season with salt and pepper.
9. Serve with ketchup and mayonnaise.
Notes:
• Best potatoes for French fries: do not use waxy potatoes, use starchy potatoes only. Russet potatoes are ideal for French fries.
• Frying potatoes twice is the best way to obtain the crispiest result.
• How to freeze French fries: after frying potatoes once, transfer them to a plate/tray and freeze them for 40 minutes. Then transfer to them to a freezer bag and freeze them for up to 3 months. When ready to serve, remove them from the freezer and fry them in batches at 400F° (200C°) until golden brown.

Haven’t had a refrigerator since November because of the pandemic. Snow storm hits and I’m running out of food to feed my family. Been stuck for a week and wasn’t able to stock up on food because of my refrigerator situation. Had 3 russet potatoes and some oil. @@mysticflow467 this is actually the shortest time I've seen...some recipes call for one to freeze them or refrigerate them overnight!! After watching those I searched, "fastest way to make french fries!" Definitely gonna try them!!
P.s. and they didn't require any extra ingredient like some have encouraged. I.e., like adding starch later in the process

After rinsing the starch i like to place in the freezer so the cold absorbs all the remaining water in the potatoes.
Makes them very crunch when frying.
Also works great when making potato chips.
Placing in the freezer like after cutting them or placing them in freezer after cutting as well keeping them in cold water for some time then putting them in freezer.
If u make a ton of chips after 1st fry u can put it in the freezer it keeps pretty well! u just need to pop them in the fryer at 400 and they will come out perfect!

When I was a kid, I remember blanching the potatoes in salty water before frying. I used to fry it only once and it was nice and crispy. I haven't made fries in the last 20 yrs so I don't remember exactly...I have to try it again.
@@nabkill0134 when you blanch the potatoes, they will be half cooked already so no need of frying two times,
I fried it only once for around 15-20 minutes and they came out really good.

Just made these now with my local supermarket white potatoes (UK) and they came out amazing! After the first stage of frying and once it had cooled down slightly, i placed my chips in the fridge for 5 minutes and then fried them for the second time.
Honestly it all depends on the quality of the potatoes you have
It really does, I didn't notice it until I made fries with different kind of potatoes and the moment I bit into one, It was tasted like burnt baby food. Never again.

@LOWFRAMEBLOX almost any starchy potato will work. Even waxy ones will usually work. Just dont put the oil too hot or else it might taste bad.

Honestly just put them in the fire. If you see it browning a bit fast, lower the first within 2 minutes and bring up the heat gradually. with this method tho they will be golden lol. If u want to wait longer and keep it on low to have that yellow look that’s good too

An easier way that works is to cut and rinse like in the video. Then fry them in a deep fryer at 230F for about two minutes. Then turn up the heat on the fryer to 360F and just let them keep cooking. You get the blanch at the start and the oil heats up in time for the finish that way. Saves a lot of time.

It's called blanching. Frying them for a few minutes will ensure that the outside stays that golden yellow and also a crispier outside.
If you didn't do this they still would be edible and nice just they'd feel store bought.

love this recipe , definetly gonna try it today!!!!! you fried it two times in oil. The first time was for the softness and the second time for the crispiness. So as the first time is for softness, can we use water instead of oil??(only for the first time *not for the second*)

So the secret is to:
•Take out the starch from the fries
• Re-fry them
Blanching the fries before hand will ensure that there's no browning. It may lead to a more crispy fry.

2: make another potato into potato oil
3: make another into potato salt
4: cut a potato in half and hollow it out to make a pot
5: cut another potato in half and rub them together to make a fire
6: make a timer using another potato
7: cook
8: go to stop and shop and buy more potatoes to repeat the process

I have a little question. Why is the potato kept in cold water for 30 minutes.?
Because they have a layer of starches on the outside, putting them in cold water removes that layer. It's kind of like cooking rice, you have to rinse it first to get that layer off. Another reason for putting the fries in cold water is because thats the key to getting more crispy fries. Hope that helps ❤️
