For me, I think one of my favorite ensemble casts is the party from the "Guardians of the Flame" series by Joel Rosenberg. There are times where the group almost feels too large, but there are several points where they have to split the party (always a great idea) to accomplish several goals at once. Also Jon-Tom and Mudge in "The Spellsinger Series". The two of them are often the core of a larger group in a given story with supporting characters changing as they progress.

It’s a skill, handling so many characters deftly. Zelazny and The Chronicles of Amber pops to mind.
