Finding a piece of rosewood large enough for a body blank would be incredibly difficult for a production run. Also, rosewood is a very oily wood and does not like to be glued to another piece of rosewood. Fender was able to source thinner rosewood boards and pancake them to achieve the final body thickness, the maple veneer is there so the top and back rosewood blanks are not glued to each other, they are both glued to a piece of maple which seemingly holds up very well. Some of the early examples do show minor separation at the pancake joint. The differences in grain between the headstock and body VS the fretboard has to do with the way the wood was cut. The body and headstock were cut from wood to show off that side grain pattern well, whereas the fretboard is cut in a way to show off the tightness of the grain in another direction so the fretboard is more...standard fretboard looking. The whole flat sawn, quarter sawn etc debate.
